Sicilian Lemon Chicken with Raisin-Tomato Sauce
This recipe is unique, with a great flavor base. My husband loved the lemon zest & balsamic zing. I made the recipe just like it asked, I think next time I'll cook the chicken first, pull it out to rest while making the sauce. One less pan & the lemon will flavor the tomato sauce more.

Salmon Chowder
This chowder is AWESOME with a few modifications: use fresh garlic (2 cloves), use fresh salmon (if you're not in a place that you can get it, the canned will work, but you're sacrificing good flavor), and add the LIQUID SMOKE (2 cap fulls). The liquid smoke is the secret ingredient that all will just savor. Oh - and don't use a maple bacon, it'll ruin the smokey flavor. All the other things, carrots vs no carrots, creamed corn vs no corn or regular corn - these things are adders that are for your personal tastes. I like the cream corn & I leave the carrots out. Yukon Gold potatoes seem to hold their crispness longer too.

Crab and Pea Salad
Wow! This is such a simple recipe & it's so good! Everyone wanted to know what was in this awesome salad. I added 1 tsp of cumin the next time I made it & it was really good. Next time I'm going to try a bit of worceshire sauce, I bet that would be awesome.
