About this Cook
I'm currenlty active duty in the USAF stationed in San Antonio TX. I'm also a breast cancer survivor so I'm very concerned about what I eat. I love low fat/low carb and easy to make meals. I enjoy chicken and pork mostly ! And I love FISH !!

Tomatoe Brushetta's. Umm..yeah..I left them to broil too long. Never seen a black tomatoe before.

Cottage Cheese Spinach Chicken
Great Recipe !! I changed things up a bit. I used 8 chicken breasts and cut them sideways (like a taco) and stuffed that way. I pretty much doubled everything. I seasoned the chicken with Tony Sasserie's Seasoning. I sauteed fresh cut garlic/butter/pepper/onion/alittle more seasoning in olive oil then added the spinach and cottage cheese. I let it cool and baked at 400 for 50 min. You will have tons of filling - about half way thru the baking I added more stuffing mix to the chicken. TASTED GREAT. My friends LOVED it.

Oven Pot Roast
EXCELLENT ! I cooked at high for 7 hours in our crock pot and used white wine instead of vermouth. I also added alittle bit more of everything. About two hours before it was done - I added carrots and small red potatoes. Meat was so tender and the gravy was awesome !
