So I finally got a Kitchen Aid mixer. It was a hard decision on the color, because now there are some really nice new and different colors to choose from. At first I thought about stainless, so it would match with my kitchen, but when I saw them at the store I just had to have a red one.… MORE

About this Cook
I am a stay-at-home mom of 2 little boys. I love experimenting new recipes and I try to cook healthy for my family with all organic fruits and vegetables. I avoid all of the processed food, that's why I make pretty much everything from scratch. You can contact me at rmw2001@hotmail.com.
My favorite things to cook
We love seafood, I also love a nice gourmet salad recipe and I like to make my own salad dressing. We also love tex-mex and vegetarian dishes. I don't eat red meat and our kids are not big on it either, but once in a while I make a dish for my husband.
My favorite family cooking traditions
The holidays are very special for us. I really enjoy cooking on Thanksgiving and Christmas and the kids love to help.
My cooking triumphs
I make the best and healthier Chicken Pot Pie (also known as Pastelao or Empadao in South of Brazil). I also make a really good German Pie, which is my husband's favorite desert.

Salsa Chicken
This chicken was absolutely delicious! Very easy and quick to preper, I added my homemade taco seasoning the night before. I also reduced the salsa to only 1/2 cup and added 1/4 cup tomato sauce just because other reviewers mentioned that it was too much salsa. It turned out very juice, nice and tender. Served with mexican rice, homemade guacamole and steamed veggies.

Paul's Pumpkin Bars
This is an AMAZING recipe! Excellent flavor, very moist, just perfect! In order to reduce fat and sugar I made the following changes: I only used 1 1/4 cup of sugar, 3 eggs, 1/2 cup of oil + 1/2 cup apple sauce and reduced the cinnamon to 1 1/2 tsp. On the cream cheese topping I used fat free cream cheese, 1/4 of butter and reduced the sugar to 1 1/4 cup. Thanks Deb this is definitely a keeper!
