About this Cook
I'm a mid-life Mom, having raised 2 grown children and a three year old. I'm most interested in healthy and good tasting food for both me and my toddler
My favorite things to cook
I love to use my smoker but haven't come across many smoker recipes here yet. I love to make chili's and soups more than making a main course with side dishes. Salads are a favorite of mine too.
My cooking triumphs
Learning to make homemade gravy years ago and learning on my own to make soups and stews.
My cooking tragedies
Years ago I made a batch of fantasy fudge from the label on nestles semi-sweet chocolate chips back then. I substituted real marshmallows for some of the marshmallow cream cuz' I didn't have enough. I added milk to the batch thinking it needed the liquid to balance out the marshmallows. It didn't set. I put the fudge in the fridge and it still wouldn't set. It didn't, so I put it in the freezer. It was set an hour later so I cut the fudge up into squares and put the squares onto a plate. Twenty minutes later the fudge on the plate was looking droopy so I set it in the fridge thinking it would be okay. It was late afternoon by then and my then husband came home from work not too long after I put the plate of fudge in the fridge. He opened up the fridge door to get a beverage and immediately slammed it shut exclaiming, "what's in there!!" I opened the fridge door and the fudge was in the process of thawing out and it had congealed into a blob that was moving off of the plate.

Mexican Cornbread II
great and easy recipe. As with all cornbreads I baked this one in my 9 inch cast iron skillet and it had a wonderful crust to it as well as the bread tasting wonderful.

Best Tuna Casserole
I read the reviews stating that this recipe can come out dry so I added about 1/2 C. soy milk(I'm lactose intolerant). I imagine just mild would be fine. Came out great in my 9x13 pan, nice and moist. It's a wonderful budget recipe.

Posse Stew
this recipe is truly easy and delicious. I substituted ground turkey for the beef as a matter of preference. I also used canned green chopped chiles to make it even easier. I'll defenitely be making this again.
