Yummy Pesto Mashed Potatoes

Zucchini-Chocolate Chip Muffins

Currently my favorite muffin recipe! Moist and delicious. I used half whole wheat flour, brown sugar, and a small container of apple sauce with a bit of oil to top it up to 1/2 cup.

Throw Together Mexican Casserole

My guests and I loved this recipe! I used medium salsa and hot taco sauce and it had the perfect kick (and I don't like my food overly spicy). I added tex mex cheese blend on top for the last bit of cooking and served with sour cream as suggested. Also substituted whole wheat egg noodles and black beans instead of kidney beans. Next time I will add red or green pepper as well.

Mine turned out extremely runny. I used light cream cheese and was sure to dry the radishes (which were from the farmer's market and might contain more moisture than store-bought?).

Grilled Chicken and Artichoke Soup

I liked the flavours and consistency of the soup but would consider adding only one can of artichoke hearts next time and maybe a potato or two instead of the second can. I found the soup too salty as well, even though I used reduced-sodium chicken broth. I would consider making my own broth next time, but the recipe already requires a lot of prep time.

Honey Glazed Pork Tenderloin

This recipe is decent as is, but this time around I made some changes. I found the original quite sweet, so I cut back on the honey and added an extra tbsp each of balsamic and soy sauce. Also added a clove of garlic and some ground ginger (didn't have fresh), then marinated overnight. I didn't have time to bake it, so I sliced it into coins and pan-fried, first to brown and then added the marinade and simmered for a bit to reduce the sauce. Served over quinoa with red pepper and brocolli.

Hearty Lentil Soup II

I enjoy a thick soup and found this nice and hearty. I added an extra carrot and parsnip since I really like veggies, and an extra cup of water to account so it didn't thicken too much.

Moroccan Tagine

This is delicious, a perfect blend of flavors and very healthy! I added cinnamon and ground ginger (didn't have fresh) as other reviewers mentioned. Next time I will add an extra chicken breast, the recipe is fine as-is, but I try to take in a lot of protein. I would also consider making the vegetarian version but would add 2 cans of chickpeas instead of one to maintain the consistency. Goes well over whole wheat couscous cooked with chicken broth.

Easy Chili I

An excellent base recipe. I left out the jalapenos and found it still had enough kick. Next time I will add a 1/2 cup red pepper as well.
