Basil Green Beans

I followed the advice of 2 other reviewers... used butter and olive oil, sauted some minced garlic, the lemon pepper and basil (I used fresh and it was great)before adding the frozen beans. I think they would cook quicker with a little added liquid...

Collards

Sorry to copy review, but LINAGNEL72' method is the one I used. Also we used too much water along with chicken broth and the flavor was diluted. So at the table I added garlic salt and hot sauce and this spiced it up just enough.

Easy Hoppin' John

Good for New Year's Day - Used Johnsonville turkey sausage, adjusted everything for 6 servings, used 2 cans peas; 1 can drained diced tomatoes; a dash cajun seasoning instead of cayenne; cooked onion and garlic with 2 slices bacon, then disgarded bacon since we're trying to eat healthier

OK, but we used hot sausage by mistake, not something I can tolerate. I think I would also use less red pepper. I will definitely make again with some other minor changes.

Easy Portobello Mushroom Saute

Pretty good! Used extra evoo and minced garlic and couple of dashes white wine; warmed diced tomatoes at end of cooking; put on top of spinach; sprinkled with a little light balsamic vinaigrette. This would make a good side dish with steaks too - guess I'm not much of a vegetarian!

Blueberry Snack Bars

A very bad experience. Could not get these to cook all the way through. Left them in the oven at a lower temp to try to get them cooked after the initial 45-55 minute time period and all that did was way overbrown the crust. On to finding a better recipe....

Sweet Potato Casserole II

Very nice for Thanksgiving dinner. Good basic recipe that I have been making for years. Next time though: use less sugar and a touch of nutmeg. Also my 2 "pinches" of cinnamon were a little overpowering. (how much IS a pinch?)

Southern Baked Yellow Squash

Delicious! I steamed the squash in a steamer basket (less water to drain), added butter all at once with the bread crumb mixture instead of drizzling on top; used panko breadcrumbs; cooked in microwave for about 10 minutes, then put in oven for about 20 to finish it off since I was in a hurry.

Cabbage and Pasta

Pretty good! I used 1/2 cup light butter and halved the recipe. Added about a cup of chicken broth to the skillet. Served with corned beef baked in the oven - good combination!

Easy Tilapia with Wine and Tomatoes

Pretty good! Used a can of drained diced tomatoes, dried basil, cooking-grade wine and olive oil/butter. Cooked in oven 400 deg. 20 minutes. Next time I'll try with everything fresher and better wine.

Slow Cooker Mashed Potatoes

Good spuds! And easy to do ahead; stays warm in crockpot. I used low fat cream cheese and sour cream, butter was the real thing; added at least 1/2 cup extra potato cooking water to make the right consistency. Cooked 1 1/2 hrs. on high in crockpot. The next day I added milk to make creamy as potatoes had become dry.

Southern Butternut Squash

OK, but next time I'll cut the sugar way down to 1/3 C. and reduce the vanilla. And, I'll add the topping which I didn't have time to do. This is definitely a company side dish (or dessert pudding?) and disguises the natural sweetness of the squash.

Easy Pot Roast

Good! I ended up putting this in the slow cooker instead of oven (senior moment?) but it was fine. Used 2.4 lb. roast and 1/2 pkg. onion soup mix, 1 cup water and 1/2 tbls. beef bouillon and some garlic. Browned the meat before adding to crock pot. No extra salt necessary. Put the veggies on top so they didn't get mushy.

Hashbrown Casserole

Perfect and a crowd pleaser! I used cubed frozen potatoes, and just as good as regular style hashbrowns. Used 1 can crm of celery and 1 can crm chicken and no cornflake topping. Make lots - people will not stop eating this...

D's Skillet Gravy

This is probably the way my mother made gravy; somehow mine is always too thin and I add extra cornstarch or flour; but maybe I don't have the patience to wait until it thickens up; I like the idea of adding some beef broth and milk to it instead of all water.
