About this Cook
I'm a wife & mother to a teenage daughter. So, Im usually put on the spot to fix her & her friends something quick, especially at the weekends. As we have only really travelled to Spain, France, Italy, Greece & Turkey I have only really experimented with recipes from those countries. As I live in Yorkshire I make a mean Yorkshire Pudding! I love to take photographs on a daily basis. I'm quite into macro photography at the moment. I love travelling, & my favourite being Spain. I hope one day to live there. I have always loved to cook. Ever since I was little, I used to pull up a chair & stand besides my grandma & help her. She taught me how to make cakes, bread, pies, pasties etc...

Corn Fritters
As I'm from the UK I've never tasted these little beauties before. I'd watched a cookery programme,where an American lady spoke highly of these, so I thought I'd give them a go. Anyway, the recipe was very easy to follow & the only thing I did was to add less salt & sugar (in the UK we try & use salt as little as possible in recipes) I fried them in Crisp & Dry & they turned out wonderful. My husband & daughter were a little apprehensive to try them but my daughter dived in with a BBQ dip & said they'd grow on her, my husband said he'd like some peppers mixed in with the corn. So, these get a thumbs up from the UK & we'll probably have them again maybe with some chicken? Could you please tell me what I should serve these with?

Chocolate Chip Pancakes
As I live in the UK & it's Pancake Day (Shrove Tuesday) I decided to make English style pancakes with lemon/orange juice & sugar. I then thought I'd give this recipe a go, mainly, for the comparison. I didn't use any salt, as here in the UK we try & use very little salt in our cooking. I did however, use 1 tsp of half sugar. As we don't use buttermilk over here, I used semi skimmed milk. Anyway, I used plain chocolate chips & sprinkled on to the batter once the bubbles appeared. I was amazed that the chocolate chips didn't melt all over the pan! So, I stacked them high & took them in to my family.......they loved them, although, I wouldn't really want more than a couple (calories & all that)LOL I then made up more batter & added raspberries! So, I would say they were a big hit with my family & yes, we will have these again (I don't know if I can give up my bowl of cereal in a morning though)

Famous Pork Chops
I tried out the recipe tonight & it got the thumbs up from my family! I did however change some of the ingredients. Firstly, I didn't use any butter & second I didn't have any Ritz biscuits, so I just used "Krackawheat" (UK) - these are quite salty, so I didn't add anymore salt. I coated each pork chop in the egg & then in the Krackawheat crumb, shallow fried in olive oil on both sides & put into the oven on 180 (UK electric oven) for around 40 minutes (turning twice). While the oven was on I also put into a seperate tin, red, yellow & green peppers, carrots, red onion, mushrooms & 2 cloves of garlic drizzled with olive oil & a sprig of rosemary. I then served mushroom rice & a garlic baguette - delicious.
