Spanish Rice Bake
Loved this. It is nothing gourmet, but comfort food. I used 1 cup of rice, a 19 oz can of tomatoes because that's what I had and a 19 oz can of water to account for the extra rice. I didn't add the brown sugar as I tasted it and liked the taste without.
