Beer Cake I
A very delicious and moist (lemon) cake. I used Duncan Hines yellow cake mix, added instant lemon pudding mix and the juice of half a lemon to the batter. For beer, I used a Sierra Nevada Torpedo, an IPA that goes well with lemon. The cake did not taste at all like beer, but was very light and moist. I made a glaze using the juice of a whole lemon, and about 1/4 cup of sugar, microwaved it until hot, and poured it on top of the cake after it cooled. The only slight complaint I had was that it was fairly sweet due to the pudding and cake mix - but overall, still yummy.

Bodega Bay Cioppino
Great recipe for a simple cioppino! Made some substitutions: blended 6 fresh tomatoes rather than using canned tomatoes; added a bottle of clam juice and some chicken broth to give it more of a broth; and left out the bay leaf because I didn't have any. To the base, I added fresh mussles, littleneck clams, squid and shrimp without peel. We ate it all with some French bread - yum!

Sweet Potatoes 'n' Pears
I just used this recipe for a demonstration at a nutrition workshop. The dish came out great! I microwaved each sweet potato (without the water) in the microwave for 5-6 minutes each. Then, mashed it with a fork and took out the skin. I substituted some low-fat vanilla yogurt in place of the butter and sugar and added half a jar of pear halves. The texture of the pears went great with that of the sweet potatoes. With the yogurt, pears, and sweet potatoes, there was no need for extra sugar. We did add some cinnamon and would've added nutmeg had we had some. The clients loved it!
