Blueberry Breakfast Sauce
Sooo easy, and not just for breakfast! I was looking for something for desert. Too hot to bake today and decided on mango sorbet that I had on hand - but it seemed too plain by itself. I made the blueberry sauce after breakfast, since I didn't use the berries in pancakes as I had planned (hubby decided he wanted bacon, eggs, and grits instead). It was a bit thick and real sweet - so after letting it stand at room temp for a bit - and adding a squeeze of lemon - it was PERFECT drizzled on the sorbet! Great light desert on this summer evening - Thanks Ellen.

Broccoli Salad Supreme
I love this salad!! Whenever I serve it, people want the recipe. I just started ANOTHER diet and I was disappointed there was no nutrition info included. So I looked everything up and it's about 300cal/serving (1 cup). My light version of this substitutes the 2 cups mayo with 1 cup light mayo and 1 cup fat free sour cream. Replace the sugar with equal (16pkg). Reduce the bacon to 3/4 lb and the almonds to 1 cup. It's still great at only 150 cal per cup!

Rosemary Ranch Chicken Kabobs
I'm planning a cook out for my hubby's b.day. He wants ribs, chicken AND salmon for the main courses - I wanted something guests could easily pick up to munch on or sit down and eat as well - so I decided to do some kabobs for the chicken. I thought I'd try several different recipes to see which one he liked the best. I was afraid he would want to do them all, as you can see he likes choices! I made this Rosemary Ranch one, Hawaiian Chicken Kabobs, Chicken Kabobs Mexicana, and Yummy Honey Chicken Kabobs. For lunch today we had one of each as a test... following all recipes exactly and marinated each one overnight. This one was definitely the best! Chicken was much more tender, juicy, and full of flavor compared to the other ones. Too bad it had the most calories/fat - but hey it's for a party!
