I am a registered nurse working in home health. I have 2 grown children and my little children are my 2 dogs and a cat. My husband and I love auto racing, computer and we both love to cook. In the last 18 months I have lost 165 pounds and good healthy meals are more important than ever to me and my family.
My favorite things to cook
I love to cook in the crockpot and on the grill but most of all I love to please people with my cooking. It's hard to beat a good filet mignon on the grill with some grilled asparagus and potatoes. One of my favorite things to cook in the crockpot is barbecued chicken or ribs.
My favorite family cooking traditions
Cooking traditions for my family are our Christmas Day meal a Mother's Day meal. Traditional dishes at these meals include a broccoli casserole, a combination of butter beans and corn with cheese, my famous green beans and of course, a hash brown casserole with sour cream and cheese. The meats will be turkey and/or ham and I found out this past Christmas that my family is partial to prime rib.
My cooking triumphs
I have had many but the Amaretto cake that I made seemed to have made a great impression on some of our friends.
My cooking tragedies
I have had a few of these as well. Probably one of my biggest failures was the time I tried to substitute self-rising flour in a pound cake instead of the plain flour, baking powder and salt. It rose up and bubbled over the pan and all over the bottom of my oven. What a mess! And the cake was inedible as well. Don't ever try to substitute ingredients in a traditional pound cake recipe.

Raspberry Oat Bars
This recipe was perfect! I made exactly as directed. Perfect proportions. I sprayed a 13x9 inch pan with Pam. I pressed 1/2 of the oat mixture onto the bottom of the pan. I spread the seedless raspberry jam to 1/2 inch of the edge. Sprinkled the top with the crumbs and pressed in gently. Cooked at 400 degrees for 22 minutes and they were wonderful. They cut into perfect bars and they were not crumbly. They looked just like the picture. Great dessert tonight after a spaghetti supper and will be wonderful tomorrow morning with a cup of coffee!!

Broccoli Cheese Soup
Really, really good and very rich. My husband loved it. Next time I will half the recipe since it is just the two of us. It is great for a large group if you are making the full recipe. It is a filling, flavorful soup. I made it exactly as written and can't think of a thing to change.

Chicken with Stuffing
So easy and so delicious. I followed the recipe just as is except I used cream of celery soup instead of the cream of chicken. Just a personal preference. Most of my crock pot chicken recipes call for 6-8 hours on low heat so I was a little wary of cooking for only 4 hours. The timing was perfect. The stuffing was moist and not mushy. My bag was 8 oz. instead of 6 oz as called for in the recipe. I used the whole bag but didn't change the recipe amounts of butter or water (I used chicken broth instead of water). The chicken was tender enough to cut with a fork, there was plenty of gravy and the stuffing was just right. I plan to make this again and divide it into 2 dishes and freeze it so that we will have a ready casserole for 2 when we need it!!
