Mediterranean Chicken with Eggplant
This was my first experience with eggplant! It was awesome! I made a few changes though. I grilled my whole chx breats along with the eggplant and some red peppers brushed with EVOO. I tossed 4 halved garlic cloves into the onion pan and sauteed those with the chx. I omitted the paste/water combo and just used a small can of tom sauce. I also added a layer of shredded mozz chz between veggies and chx. Then baked as stated. I will be making this again. Thank you for sharing your recipe!

All American Apple Pie
One word can describe this pie--awesome! I did cheat and use store bought crust though. I did only make one change to the topping. I used 1/4 cup white sugar and 1/4 cup brown sugar. Thanks for sharing your recipe with us!!

Split Pea Soup with Rosemary
I used a crockpot! I had a huge hambone that I used instead of the bacon. I put in a box+3 cans of chx broth, 2 bags of dried split peas and a small bag of baby carrots whole. At about 5 hours the meat fell off the hambone with a little help. At the 6hr mark the peas had softened up and made the pea-green color soup that was delicious! Will become a winter staple in our home for sure! Thx!
