About this Cook
Cooking and baking is therapy. Some people eat to feel better...I cook to feel better. I get great satisfaction when people eat my food. That's why I went to culinary school. Never worked in a restaurant though. I decided to be a stay at home mom and wife. My husband is my hardest critic as he is the most picky eater anyone will meet. Worse than any child! I love him so much though...his critics make me better. Then there are my daughters...the oldest one is also picky, the middle will eat anything and everything, then the youngest is too young to eat solids...for now.
My favorite things to cook
Ooooohhh! I love to cook anything from scratch. My theory is...anything homemade is better. My family is filipino, but I only know how to cook 3 or 4 filipino dishes. My husband and kids love my chocolate cake cookies, and my friends love my apple pie. I personally love my cheesecake, which is actualy the Chantel's NY cheesecake. I add things to it sometimes, raspberries, chocolate, caramel...whatever i'm in the mood for at the time.
My favorite family cooking traditions
Well, my family is still very young. My husband and I have only been married 4 years so, we're still making traditions. Although, my mother bakes sweet and sour red snapper every New Year's and let me say...you can't and will never find anything better anywhere.
My cooking triumphs
In culinary school, we would have mini competitions within the class and I won a few of them. Shrimp Bisque, Chicken Spidini, Coq Au Vin, and Sole fillet in clarified butter. Outside of school, I was able to duplicate a lamb chop recipe from my favorite restaurant.
My cooking tragedies
In my baking 1 class, I was suppose to bake dinner rolls. Well, I didn't want to bake 5 dozen so I cut the recipe down to only bake 1 dozen rolls. I must have miscalculated because when they were done they were hard as a rock. In fact Chef Rudy went out of his way to point out my mistake and let the class play "baseball" with my rolls. It was quite embarrassing.

Spicy Rapid Roast Chicken
I used this recipe as a temperature and time guide to roast a chicken. I didn't use the seasoning in this recipe. Instead I mixed together Montreal Chicken and Rosemary Garlic seasoning then roasted it according to the recipe. PERFECT!!!! Crispy skin and tender fall off the bone moist meat. This is the best way to roast a chicken.

Smooth Sweet Tea
I will never buy sweet tea again from the store when it's super easy to make and tastes better! The best part of this is that i can give my kids sweet without the high fructose corn syrup!

Chili-Lime Chicken Kabobs
This was a very good recipe. I added a few dashes of soy sauce and Worcestershire sauce and 1/2 tsp of cumin. Awesome!!!! Great summer grilling recipe.
