Fiesta Pinwheels
I just served this at a lunch potluck and they disappeared! I did make some changes - I warmed them up and served them with sweet chili sauce. I had no trouble rolling them up, but I did leave out the olives!

Coconut-Cream Cheese Frosting
This frosting was amazing! The texture was perfect. Next time I will add less sugar.

Sam's Famous Carrot Cake
This cake was simple and delicious. It was my first attempt to make a cake in a while and this turned out to be amazing. I'm looking forward to making it again. I will add a few more raisins next time, but only because I like raisins!
