Pumpkin Pecan Cheesecake

Very nice recipe. I made it in individual small graham cracker crusts, which was nice for serving, but made it difficult to contain the pecan topping.

Awesome Sausage, Apple and Cranberry Stuffing

Day Before Mashed Potatoes

I must have used huge potatoes, because this dish was more dry than I would expect (not as creamy as making plain mashed potatoes).

Recipe did not specify to pound chicken breasts so that they are thin. If this isn't done, it is difficult to roll and chicken takes much longer to cook. I liked the spinach in with the rest of the flavors.

Mini Meatloaves

These were tasty, and the combination of oats and cheese helped the mini-loaves hold their form and gave them a nice flavor. The sauce was a little bit sweeter than I like.

Lemon Garlic Tilapia

Very tasty dish. It's a unique dish, very different grouping of flavors than what I would normally put together. Prep time, for me, was a little longer than 15 min.

Spanish Chicken and Rice

I enjoyed this dish. During preparation - there was not a lot to cook the onion, pepper, and garlic in (maybe I used very low fat chicken which leaves almost no drippings?). So, I added some of the chicken broth early, and it seemed to work ok.

Black Bean and Corn Quesadillas

My husband and I thought this was a tasty dish, but a little plain for the amount of work. I have tried a very simple bean and corn tortilla recipe that tasted very similar. I imagine it could be transferred to quesadillas and taste very similar to this recipe.
