this is more like chicken creole instead of jambalaya but it was wonderful no matter what! I had to improvise on the ingredients (had no sausage and used stewed tomato instead of diced). It was a little juicy but turned out perfect with adding cooked rice into it

Marinated Flank Steak

I was looking something besides the 2 dishes i usually do for flank steak, boy am i glad i picked this recipe!! made as stated and it need no improvement. meat was very moist and flavorful. oh yeah, i only marinated for 1-1/2 hour.

AMAZING! Have made it quite a few times now changing it to what I have in the house (always adding more cumin than asked for, my fave spice!). This recipe is a winner every time. Best part is my hubby said its better than his mothers, who is from Panama!! I am sure he wont let her in on that, lol

Roasted Rack of Lamb

It was pretty good but next time I will grill outside, which is my preffered cooking method for lamb. the smell was intoxicating and had us drooling before the plates hit the table though!

Guinness® Corned Beef

Good stuff. Not only my first time making corned beef, but first time eating it! I placed the meat in the beef as some ofers suggested and it came out super moist. May try again with my husbands favorite beer shimay since it is heavy like guinness.

Sausage Stroganoff

Fantastic! The only thing i did different was saute onions and garlic before adding the pork (kielbasa). It was a little thin but stuck well with the egg noodles. definately a keeper! FYI- For those who are concerned about the sodium intake, most of the items it asked for come in reduced sodium. Thats what I used and I feel it did not hurt the recipe at all. I also used "reduced fat" it items that had it avalable.

Real New Orleans Style BBQ Shrimp

This was awesome!!! I made a few modifications as some other reviewers suggest: added red pepper, a little more creole seasoning, and halfed the butter content. It was plenty rich and there is no need for that extra butter. Will make again!

Spinach Enchiladas

Like other reviewers, I added a few spices to the spinach while cooking (white & black pepper, cumin, and cayenne) which made a wonderful difference! Next time, I would definately use a white sauce instead of red- they didnt seem to mesh well by my pallet.

Perfect Baked Potato

Really delicious potato! Seems silly but I have gotten into the habit of nuking my potatoes and could not remember how long I needed to cook them in the oven. I microwaved for 5 min as another reveiwer suggested and baked for 45 min at 350. It was so delicious my husband ate the skin (he never does that)

Cinnamon Nut Coffee Cake

Yum! I made these as muffins and they were tastier than the ones at my local coffee house. I used pecans instead of walnut. Next time, if making as muffins, I would cover for a little so the nuts do not burn. I have to remove a few before serving

Margaritas on the Rocks

My husband couldnt believe I made such a tasty & refreshing 'rita! I have been trying out my own recipes and some I have found online and I will look no further!! I used Cuervo Silver Tequila & Cuervo Mix as well. The Silver definately makes it smooth. Warning...these really pack a punch!

Across the Border Tequila Shrimp

Fabulous flavor! The only reason I gave it a 4 instead of a 5 because the sauce did not evaporate & could have been a little thicker. Next time, I will add a little cornstarch to it. The was perfectly complemented with Panamanian rice & beans and leftovers served as a delicious shrimp omlet the following morning. Yum!
