Turkish Style Eggs

Reviewed: Jan. 17, 2012
I love this recipe, which I actually found in another cookbook. Try adding chopped, fresh parsley to the butter, and if the garlic is too strong, add that to the butter sauce, too, to mellow it out some. A few hot pepper flakes are also a nice touch if you like a little more heat. Great dish!

Easy Sugar Cookies

Reviewed: Dec. 31, 2011
These taste great, but they didn't spread out the way another reviewer had described. I ended up having to flatten the cookies on the first pan after the baking time had ended and they were still very round and very not done. The rest of the batch I flattened before baking with the bottom of a glass dipped in sugar. They turned out great and were great for the kids to decorate.

Saltine Toffee Cookies

Reviewed: Dec. 3, 2011
I love this recipe. It is so inexpensive and addictive! The only problem I have is that in the few times I've made this, about half the time everything comes out great, easy to remove from my stoneware bar pan, and the other half of the time it seems a bit burnt and very hard to chisel out of the pan. Today I didn't stir the butter/sugar mixture as it boiled as the recipe says to do, and I got the almost burnt, stuck on version. Last week I did stir the butter/sugar, and everything came out great. Not sure if this is the reason for the difference in results, or if something is wrong with my oven. This won't stop me from making these and trying to figure it out!

Adrienne's Cucumber Salad

Reviewed: Sep. 15, 2011
I am mostly writing this review as a reminder to how I want to try to change it next time. I only used 1/2 cup sugar and I didn't like the sugar taste, so next time I will try using only 1/4 cup. I also drained the liquid after chilling and added 1 cup sour cream for a creamy version of this salad. That came out nicely. Overall, very nice place to start!

Key Lime Pie VII

Reviewed: Nov. 10, 2010
I can't even begin to say how awesome this pie came out! I followed other recommendations of using 2 cans of sweetened condensed milk, expecting them to make 3 cups. They only made 2 cups, but it looked like enough to fill my store-bought crust so I proceeded with the recipe, not changing any other amounts. The pie came out SOOOO GOOD! I like things tart so I thought the taste was perfect and it was so creamy! I made some homemade whipped cream with just a dash of splenda and vanilla so it wasn't sweet like cool whip. Everyone who ate this with me thought it was fantastic!

Chicken Enchiladas with Creamy Green Chile Sauce

Reviewed: Oct. 29, 2010
I have made this dish many times and everyone loves it. The only changes I have made over time are to double the amount of green chiles in the sauce, saute the onions first (the first time they came out still crunchy in the enchiladas and I didn't like that), and I spoon a little sauce into each enchilada before rolling them up. Heating the corn tortillas first is a MUST, otherwise they crack and split when you roll them up. I have tried this recipe with four fajita-size tortillas and they are great, too. Sometimes I will do half flour, half corn, especially for friends so they can choose. Overall, SUPER great recipe! I'm so glad I found it!

Norwegian Pancakes - Pannekaken

I was expecting these to be different than traditional pancakes, but I wasn't a fan of the eggy texture.

Ultimate Breakfast Casserole

Reviewed: Aug. 23, 2009
I don't usually submit the changes I've made, but this dish turned out great and if I write it down on a piece of paper, I'll never find it again. Most of the changes were because of what I had on hand: I used tater tots, 1 lb. bacon, 6 eggs, 8 oz. sour cream, and cream of mushroom soup. I did use more than 3/4 cup shredded cheese, I'd say about 1/2 a block. I didn't drizzle any butter over the top, but next time might spray the top with Pam before it's done to see if that crisps up the top. It was great without messing with the top. I brought this to a church potluck and it was gone in a flash. I got a little and it was so good, I plan to make it just for my family soon.

Canja

Reviewed: May 20, 2009
This chicken soup is great! It's a little different from the ordinary, which is just up my alley. I think the fresh parsley is what makes it taste so great. The fresh tomatoes are great, too, better than canned. I follow this recipe exactly, except I don't bother to make sure I have exactly 3 lbs. of chicken. A little less doesn't make any difference. It's just a matter of preference, really, as is the amount of ham. Just don't substitute or leave out the fresh parsley!

Mexican Baked Fish

Reviewed: Feb. 1, 2009
I didn't think this dish would be sooo good since it was sooo easy, but it was awesome. I made it for company and my skinny-minnie friend ate FOUR servings! It was so easy I didn't measure anything. I used 3-12oz. packages of frozen flounder, patted it really dry as other reviews recommended, and placed it all in a 9x15 jellyroll pan with just a little overlapping. I used 1-16 oz. jar of salsa, 1-10 oz. block of cheese, shredded, and about half a bag of chips. Baked for 20 minutes, the same time it takes to cook Spanish Rice. Everything was done at the same time and was great with avocado and sour cream. This is going into our favorites file for sure!

Cranberry Pistachio Biscotti

Reviewed: Jan. 1, 2009
This is one of the best tasting biscotti I have ever eaten! Even my husband couldn't keep his hands off of it and he's not a fan of cranberries. I followed the recipe exactly, except I used half regular Craisins and half orange flavored. It came out very nice with a just hint of orange taste. I made this as a gift and will definitely make again for myself next time!

Ham and Cheese Bowties

Reviewed: Jan. 1, 2009
This is a great recipe and my kids just gobbled it down. I didn't follow it exactly: the cheese I had on hand was mozzarella and a little cheddar, I doubled the ham, and I added some frozen peas and frozen sliced carrots. The sauce wasn't as cheesy as I would have liked, but that may be due to the fact I didn't use the cheese called for. I'm sure it's just as good or better when following the recipe exactly.

4-H Corn Special

Reviewed: Jan. 3, 2008
I halved this recipe and baked it in a 9x9 for my small family, but kept the onion and spice amounts the same, basically doubling them as the other reviewers suggested. I used canned diced tomatoes with garlic, basil, and oregano instead of fresh (it's all I had but it added some good flavor) and added some montreal steak seasoning. My husband loved it, but it was a bit spicy for my 4-year-old. The extra seasoning was definitely a good idea, but next time I won't double the tabasco so my daughter will eat it.
