Chicken Tortilla Soup II

Good start for a soup. I have made this a few times and find it still needs a bit more flavor. I tried adding both green chilies and black beans or pinto beans and It hit the spot for me. As for the tortillas, after reading various reviews I decided to fry them and set aside. I added half of them in 10 min before serving (for some texture) and served the other half crispy on top. Save yourself some time and buy tortilla chips at the store. Good stuff though.

Can't Tell They're Low-fat Brownies

For low fat they are good. I used splenda instead of sugar and I followed previous suggestions to reduce the the ammount. I wish I had not. Other than that, the texture was close and the flavor was unique. They passed the kid test. And that is what is ultimately important.

Cajun Cabbage with Rice

delicious! Perfect comfort food. I had an extra bag of coleslaw mix and I didn't know what to do with it. I found this recipe and wasn't sure the kids would like it but I wanted to try it anyway. They loved it! And my husband went back for seconds. I had to lay off some of the spice for the kids sake but I bet it is even better with the heat. I am looking forward to tomorrow when I can eat the left overs.

Ground Beef Wellington

This recipe has good bones but to get it good I had to do quite a bit of tweaking. You don't really need that much ground beef. I added more mushrooms and doubled the onion. The sauce needed a lot of help I added various seasonings as well as Worcestershire. It turns out better when you make individual rolls (I prepared this both ways at once) To do the individual rolls you need more of them.

30-Minute Minestrone

GREAT! I was unsure about the macaroni noodles but they turned out wonderfully. Because I made such a large batch I cooked the pasta separate and added just enough to each bowl. That way the pasta wouldn't get swollen and mushy for the next meal. I was out of beef bullion so I used chicken broth. So good and really healthy!

Any-Season Fruit Bowl

Wonderful! Everyone loved it.They kept saying "it's got something in it what is it?" I substituted splenda for the sugar so I had to reduce the amount by half. This was truly amazing and I will make it over and over again!

Chunky Minestrone

This was yummy, nutritious, and filling. I will make it again. I did add some left over chicken breast but only because my husband loves meat. Without the chicken, it is equally delicious.
