Fast and Easy Spinach with Shallots
Make sure you like the flavor shallots! It was too strong for me and I did not like this dish at all. I actually rinsed the cooked spinach to eat it so I wouldn't waste it.

Vegan Red Lentil Soup
I made this tonight and it was delish. I didn't have fenugreek seeds, tomato paste, or curry powder and don't like the taste of nutmeg in soups, so omitted those items both otherwise made it as written and enjoyed it over cooked brown rice. I can't wait for lunch tomorrow so I can eat some more. Thanks for sharing!

Easiest Eggplant
It was okay- a bit mushy in the middle. The taste was slightly fishy- not sure what that's about. My partner liked it, but it made her tongue numb. Won't make it again.
