Spicy Tomato and Lentil Soup

Loved this recipe! I'm living in Tanzania at the moment and it's hard to find ingredients, but did manage to find everything for this recipe following some of the substitutions that others suggested - Red chili flakes, fresh tomatoes and a bit of extra water. I'll be making this again soon!

Classic Bran Muffins

This is a great recipe. I followed the suggestions of others and used applesauce instead of oil. I also added one finely chopped apple with the raisins. I will definitely be making this again soon.

Fresh Pear Pie

This was a great recipe. I followed the directions to a T. Next time I will cut down on the cinnamon as I found it a bit overpowering and I'm not the biggest cinnamon fan. But it was still delicious and I'll be making this every pear season for years to come!

Pineapple Banana Bread

I used half brown and half white sugar and half whole wheat flour. Delicious. Moist. I did one loaf and 12 muffins. I'll be making this again.

Oat Bran Muffins

A friend gave me Oat Bran and I had no idea what to do with it. This was a great solution. I followed the other reviews and added more applesauce, cinnamon, vanilla and raisins in orange juice. Very tasty. I'll definitely be making these again soon.

Rae's Vegetarian Chili

This is a good base recipe, but I did change quite a bit. I never have beer in the fridge so used white wine instead which added a nice flavour. I didn't use tomato sauce - just one can of tomatoes and one mini can of tomato juice because it was a bit too thick at the end. I only used three cans of beans as that's all I had and used frozen corn. There was a bit of tofu left in the fridge so I chopped that up and threw it in too! The spices listed make it quite spicy, but very flavourful. As I'd never made chili before, I wouldn't have known where to start, so this was a great recipe to point me in the right direction. Just know that it is flexible and you can change it to suit what you have on hand. Next time I might use dried beans (rehydrated obviously) and see how that turns out to save some money and cans!

Annie's Fruit Salsa and Cinnamon Chips

This is a great recipe. I brought it to a girls night and got a great response to it. I didn't add any sugar, and used homemade strawberry jam. It was plenty sweet without the sugar. I didn't have quite enough raspberries, so added some frozen peaches which I let thaw in a strainer to eliminate some of the juices. The apples I plunged into lemon water for a second before adding to the salsa and they didn't turn brown. I don't use anything in an aerosol can, so lightly brushed melted butter over the tortillas and it worked well. I'll definitely use this recipe again.

Banana Crumb Muffins

Delicious. My mother had one and couldn't get over how easy the topping is, but it really makes the muffins! I used 1/2 whole wheat flour, 1/2 unbleached white flour. I also used organic cane sugar instead of white sugar and oil instead of butter. This will be a regular recipe from now on.

Easy Corn Chowder II

This chowder was alright, but I wasn't thrilled. I felt it was lacking something, but I didn't know what to add to it to make it better as I'm not an experienced cook who intuitively knows how to change a recipe. I would try other recipes before making this one again.

Winter Solstice Soup

Quite delicious and even better, quick and easy. I had all the ingredients on hand and whipped it up in less than an hour while having tea with a friend. I added one boullion cube when adding the water, but didn't change anything else. Excellent. I'll definitely be making this again!

Cream of Broccoli Soup I

One of my favourites in my cooking "career" so far. I used veggie broth to cook the broccoli (and added one potato at this stage) and omitted the chicken boulion. I took the suggestions of some posters are pureed all the broccoli. I threw in about a cup of cheddar at the end of cooking and garnished with extra cheddar. Excellent soup. Will definitely make it again.

Beth's Spicy Oatmeal Raisin Cookies

I followed the recipe exactly. The cookies look delicious, but all I can taste is the shortening. I may try it again using only butter as some posters suggested but will definitely skip the shortening.
