I did make this several different ways, the original being the very best. I also made it with wheat flour to make it "healthy" and it was good, but did taste like health food. That would be good for the health nut in your life. I also made it using applesauce as a substitute for half the oil and eggbeaters. Admitedly not as good as the original, but a great low fat alternative. It's also good for those who like a less heavy and rich bread. It came out lighter and fluffier. I also wonder if I could use more pumpkin (like the rest of the can) in place of some of the oil. I did use canola oil, by the way, and it was still fantastic.
