Apple Strudel Muffins
With the modifications others suggested, these were wonderful. I used half brown and half white sugar, used two apples and added 1 teaspoon cinnamon to the batter. I made them for the new neighbors next door, and I was really glad I made them rather than buy them something from the store.

Eggplant Rounds
This is a simple but tasty preparation that I'll definitely make again. I cut the eggplant thick -- about 3/4 inch. I also cooked some zucchini the same way, cut in third lengthwise (they were small zucchinis). I added some garlic powder to the cornmeal mix, and I baked instead of frying the vegetables. I cooked at 400 for about 40 minutes, using plenty of oil and flipping halfway through. I'm very satisfied with these; they go great with the stuffed shells I made for dinner.

Asian Ginger Dressing
After just finishing having this for the first time, I can tell I'll be making it a lot and using it in salads and as a marinade. I skimped a little on the honey and used tamari instead of regular soy sauce, because it was all I had. I also subbed about a teaspoon of sesame oil (all I had) for some of the olive oil. Next time I'll use more sesame oil. This was delicious on my spinach salad with veggies and pepper-crusted tuna steak bites.
