Thin Mint Crackers

Thin Mints have always held a special place in my heart so when I came across this recipe, I had serious doubt that something so simple could produce my beloved cookie. Much to my surprise, this is a mighty fine copy of my favorite Girl Scout cookie!! I made some with sprinkles, some with crushed candy cane, and some I left plain. I actually preferred them plain but all versions were yummy. Made it just as written using Ghiredelli bitterweet choco chips. Using Andes chips as others have mentioned would cut down on an ingredient but we're only talking 3 ingredients. Mmmmmmm.

Peppermint Meringues

It took 3 times to get this right but it really was "the charm". The first 2 times, I used peppermint extract and both times, the fluffy egg whites deflated and took on a shiny appearance. The didn't cook right (flat instead of fluffy) and tasted more dense than meringue should. The third time, I made it without the extract and they came out perfectly. It was the only difference between the first and second, and then third, time. I highly recommend this recipe but only WITHOUT any add-ins like the peppermint extract.

Tomato-Curry Lentil Stew

I gave this 4 stars because shockingly, my family that vehemently dislikes anything remotely healthy, actually really like this recipe. I thought it was just okay. It did take a bit of added seasoning (a lot more curry, garlic powder, onion powder and a lot more salt than I thought it would need). I would've rated it far lower but the family liked it. Makes a bunch!

Chicken Cheese Chowder

Maybe my expectations were too high after all of the rave reviews but I was very disappointed in this recipe. I made it just as written (only subbing butter for margerine and real cheese for "processed"). Maybe those subtle changes were enough. It was way too runny to be considered a "chowder" and needed some last minute spice additions due to being bland. Nobody was wowed by this, not even my son and me who should be regulars at Cheese Eaters Anonymous. Won't be making it again.

Asian Beef Skewers

Holy cow (ha ha, no pun intended) is this good!!! I'm not a red meat fan and my husband's not a my-cooking-fan so there were 2 strikes already against this recipe. Everyone, my husband, 3 of our kids, and myself, all loved this recipe! (Only the 1 year old spit it out - not surprising since it didn't come out of a Kix box.) I marinaded it for about 4 hours but really, the only change was that I made it stove top in a pan instead of on the grill (rainy night) so the fact that it was still good, I can't wait to actually try it grilled! Really, really worth making again!!!

Taco Seasoning I

What more can I say that hasn't already been said. It's a great recipe made of a combination of pronounceable ingredients. And yes, no MSG!! Made a bunch so I'll have it onhand (as to not be tempted by the packets that are sitting in my pantry). Mmmmmmmmmmm.

White Sauce

Great basic recipe. I substituted whole wheat flour instead of the white so my "white sauce" was more of a light beige-ish sauce but the taste was still great. Served it over pasta with salmon and it was the perfect side.

Brooke's Best Bombshell Brownies

What - are you kidding me? How long has there been a way to make brownies that didn't involve opening a box?! These brownies smell, and taste, yum-arific!! I followed the recipe exactly (except I used 1c regular flour and substituted the remaining 1/2 c of flour with whole wheat flour - my pitiful attempt to make these more nutritious). It did take a bit longer to cook than the 40 minutes stated in the recipe but that was probably due to my elderly oven. These are definitely worth making on a regular basis.

Buffalo Chicken Dip

More than anything I can say about this is overshadowed by my anti-all-dips-husband. I made it for an outing over a friend's house and when he heard we were bringing dip - he was HORRIFIED (he thinks of bringing dip as equivalent to bringing a bag of Pork Rinds to a dinner party). It took hearing a few of the guests complimenting it before he would try it but when he finally did, he was very surprised - and impressed. It really is good. I made it just as written (except for baking in the oven at 350 for 30 min instead of the slow cooker), although, I did half the hot sauce initially. It didn't seem to have enough kick (and we're not spicy food people) so I threw in some more (probably still didn't equal the 3/4 c. called for). Very very good!!!!

Corn Dog Muffins

Didn't have cornbread on hand so I made the Basic Corn Muffin recipe from this site. Cubed hot dogs up but other than that, made recipe just as written. My kids LOVED them. It was the perfect quickie-gotta-rush-off-to-soccer dinner. Thanks!!

Andouille and Chicken Creole Pasta

I can't knock it for this but WOW, was this spicy! And I cut down on the Cajun seasoning. If you could get beyond the nuclear fallout in your mouth, this was good. Not sure I'll make it again but to make it family friendly, REALLY cut down on the heat!

I would've never, in a million years, thought that was all there was to making REALLY GOOD granola!!!! I made it with the kids and I actually had to reprimand them to stop eating it or it would've been gone before my husband got home from work (and it was for him!) Made it just as written but with 1 c. raisins and 1 c. craisins. Can't wait to try it on ice cream or yogurt and as cereal. Most helpful advice from previous reviewer is to not panic when it comes out of the oven looking less than crunchy. As it cools, it does crunchify. Ahhhhh, granola with an ingredient list that entirely pronounceable.

Marinated Grilled Shrimp

What a yummy recipe! Made it based on what I had onhand - substituting red wine vinegar for apple cider vinegar, dried basil for fresh, and V8 for tomato sauce. Biggest change was to cook it on the stove instead of grilling. Even with all the changes, it was still really good (served it over egg noodles to make it go a bit further). Even my cranky-pants husband (bad day at work) admitted that it was really good.

Puppy Chow

I, along with my 6, 8, and 10 year old assistants, just made this. It is super easy and very tasty (albeit pretty darn sweet). Everyone - even the neighbor kids, liked it a lot!!!! Good summer vacation activity.

Gramma's Old Fashioned Chili Mac

I'm not sure what I was thinking going for such a "heavy" dish on a hot, humid early-summer day. Add to that, I didn't even have one of the main ingredients, like I thought I did (tomato soup). The story has a happy ending though because, even though it was a bit heavy for the weather, it was really tasty! I did make some changes, based on an earlier review. I wanted it to be a 1-pot meal so I browned the beef and onions, added garlic salt, chili powder, the tomatoes, uncooked pasta, and extra water for the pasta to cook. The only big substitution that I made was for the ingredient that I didn't have on hand - instead of the condensed tomato soup, I used V8. I wasn't sure how it would turn out but since it was all I had on hand, I gave it a try. It was really good. And I snuck in a few extra vitamins with the juice vs. the soup. Oh, and don't tell my kids (or my husband, for that matter) - I also snuck in 1/4c flax meal. Shhhhhhhhh. Substitutions and additions included, everyone raved about it!

Healthy Banana Cookies

I guess I'm destined to be a junkfood-junkie. I made these with such hope that a cookie could be "healthy". Considering all of the positive reviews, I must've done something wrong. The only redeeming quality of these was the horrified faces that my 9, 7, and 5 year olds made after trying them (they made very funny faces.

Fettuccine with Sweet Pepper-Cayenne Sauce

I read the previous reviews before making this but was in a rush and forgot to use less cayenne pepper. WOW!!!! (And not in a good way!). It was too hot to even eat! My 9, 7, and 5 year olds wouldn't have any more than the required first bite - and, for once, I didn't question it! Way too much heat as written!!!!! (I even tried to dilute it with more chicken broth. Irrepairably spicy!!

Peanut Butter Cup Cookies

Have to agree with the masses - these are definitely worthy of 5 stars! And no, they are not overwhelmingly peanut buttery. The only change that I made was I used mini peanut butter cup bits (tiny peanut butter cups about the size of a chocolate chip), mixing them right into the dough. Also, I just used baking sheets, not a mini muffin pan. I did refrigerate these for about an hour which helped the cookies not flatten and the mini p/cups keep their shape. Really good cookies but be sure to have milk on hand.

Italian Wedding Soup I

I've made this a couple of times. The first time, I made it exactly as written (using spinach instead of escarole) and it was delicious. Most recently, I subbed beef broth for the chicken broth and again, used spinach. I also made the meatballs smaller and incorporated a lot of previous reviewers' advice to make it ahead of time so the flavors can set. Both times, it was super good but I do think that making it ahead of time does add to it. Perfect for a cold, windy winter night.
