Roasted Beet Wedges
I belong to a local CSA (community supported agriculture) and my last vegetable delivery included beets. I've never been a fan, but wanted to try them. It was the first time I have ever prepared them myself. The recipe was simple, and the beets taste great (for beets)

Roasted Rosemary Cauliflower
This was so delicious and simple! I picked up some cauliflower (happened to be purple cauliflower...my local gourmet market doesn't seem to sell normal colored cauliflower anymore!) and I wanted to use it up. I had some potatoes and parsnips that I wanted to use, so I cut those up small and threw those on the baking sheet as well. I thought I screwed up and overcooked the cauliflower since I let it in the over longer than you stated, but it still turned out delicious. The rosemary was great, and I am happy to have a quick and easy way to prepare this vegetable now.

Candied Yams
I made this for Thanksgiving, and it was truly amazing. I had some pecan halves, so I threw those in under the marshmallows, and it gave it a great crunch.
