About this Cook
I have been involved in the food industry for over 31 years. I love cooking, and to try new things is wonderful. I read cookbooks like a novel, and try recipes that are different and unusual. Living in Fiji introduced me to totally new fruits and vegetables, and a 360 degree change of cooking. I love the challenge!
My favorite things to cook
I love Italian foods, and creamy dishes. Trying new dip recipes and sauces are a lot of fun. I entertain several times a week, so there are plenty of people to "experiment" on! It is constant summer in Fiji, so grilling and barbequeing are a natural here. New seasonings and spices are great additions to my recipe box.
My favorite family cooking traditions
We love deep fried turkeys. However, they are very expensive here, so I have learned to cook with the local fish and seafood instead. Incorporating the new with the old helps my family see the creative feature of living in another country.
My cooking triumphs
My family sailed to Fiji from Miami, Florida. It took us nearly 5 months. Cooking on a little 2 burner stove on a moving yacht is quite a challenge. I had to get used to constant movement and rocking, and bracing in my galley! But we managed to eat very good and hearty meals like homemade lasagna, Greek leg of lamb, homemade pizza, steak dinner, lobster, and much more.
My cooking tragedies
I was catering a luncheon at a new facility in our town, and brought all the food to be heated to the building. My roasting pans did not fit in the oven, as they were about half again as big as the oven! My daughter who was helping me, rushed the pans to our house, where she heated everything in the commercial oven I own. Lunch was a little late, but the guests loved what was served.

Basil-Lime Sorbet
I was sceptical with the combination, but this was fantastic. I serve it after a spicy meal, and it is the perfect ender to a meal and cleanses the palate beautifully. I also experimented with rum for a beautiful mojito! This recipe is so good and so easy, and keeps in the freezer for a long time. Thank you for this creative idea!

Carrot Coconut Lime Soup
The ease of preparation for this soup made it better yet! The blend of flavors that tingled the tastebuds was a delight. The taste was very exotic. I would add another teaspoon of cumin for more zip. But overall, a very good and different twist to a soup.

Fusion Hummus
Nice change to hummus-a fusion twist! I added crumbled feta cheese to this as well, which made a fabulous add in. Thanks for the new idea for an already awesome dish. It's fun to try new things, and this is definitely a keeper.
