Butternut Squash Soup
I read this recipe and then read of few of the reviews and made some changes. I baked the butternut squash with olive oil, salt, pepper and crushed garlic for 1 hour @ 350 degrees. I added 1/2 sliced apple. I used 32 oz. of chicken broth because I knew if I didn't use the entire package for this recipe it would end up going to waste. I blended the soup with a hand blender (easy!) I didn't have any cayenne pepper so I used extra ground pepper and a little bit of ginger. I also left out the cream cheese because it was creamy enough and the butter (I used butter instead of margarine) added enough calories and fat. Next time, I will try olive oil instead of butter. It was sooo good!!!

Apple Crisp
I made this recipe for my family with a variety of fresh apples. I added rolled oats to the food prcocessor (1/3 cup). It was a huge hit. The nuts give it so much flavor.
