The Ultimate Cosmopolitan

So good. I increased the servings to 12 and put all of the ingredients into a glass pitcher for a party - all of the ladies had a cosmo. Very swanky.

Sophie's Zucchini Bread

This is my personal fave. I have made it several times. The last time I made it I swapped out almost all of the oil for applesauce - and it is delicious!!! Also - in the past I have omitted 1 of the cups of zucc and replaced with pineapple. Also good. Throw in a handful of coconut and some nuts...I could go on and on...

I halved the recipe - layered as stated by a previous reviewe, then baked at 350 until bubbly. Served with celery and it is really good. Who knew - it could be this easy.

Spanish Rice Original

YUM. Used only 1 onion and one green pepper. You will need more than one cup of stock. The bacon is very important here - unless you can find liquid smoke (for the vegans). Also, you may want to add some spice if you like it hot. Maybe cayenne in addition to the chili powder. It had great flavor, but no heat - if that's what you are into.

Very nice pumpkin roll. So delicious - very spongy cake, with great flavor. Not too pumpkiny or too spicy. Just perfect. In fact, I cannot believe that I made it - it was so good. Easy to roll. Did not stick. Just take your time.

Very good recipe. I used this recipe for mini quiches. I used 2 whole eggs, and the yolk of the third. I used about 3/4 cup of cream. It made about 36 mini quiche. I placed cheddar on the bottom, followed by the toppings, then the custard. I also made some just veggie ones and used a pinch of nutmeg, red pepper, and/or mushrooms very finely diced. They are very good. They really puff up

It's kind of wimpy. The crispiness is perfect, but we need MORE SEASONINGS! Less salt. Next time I am going to double the seasonings. Maybe it needs cayenne?

Orzo with Parmesan and Basil

We really loved it. Saute a few cloves of garlic, then make sure you thoroughly saute the orzo in butter and or olive oil. It will turn brown when it is toasted. I am sure that I added more chicken stock than it calls for, because I added some then added a little more as needed. I used fresh basil and it was quite tasty. Like something you will find in an upscale restaurant.
