Blueberry Scones

This was a simple, fast and easy recipe to make. I get tired of making sugary cookies I snack on at night. With these I can have a couple with my AM coffee and let go of the guilt. I made one batch blueberry and one plain with sugar and cinnamon.

Taco Salad

Though we love the idea of a taco salad this one was not our favorite. The taco seasoning was a little overwelming so I would have used less. Adding a layer of avocado, olives or sour cream would have made it more interesting. The concept was a good one but the recipe needs some tweaking.

Squash with Tomato and Feta Cheese

We very much enjoyed this recipe. We made it exactly as directed with the exception of replacing goat cheese crumbles for feta. It was a tasty combination and would work well for a Sunday brunch option.

Tomato Basil Pasta

The garlic and onion were a little strong. I would have sauted them for JUST a couple of minutes before adding them to the mixture. We used goat cheese in place of feta and it was a nice change. Overall we really liked it but the garlic/onion were a little overwelming. I would double the basil but I LOVE basil!

Aunt Mary's Eggplant Balls

These were really good. We made them into patties instead of balls. Then we added a roasted garlic sauce over the top. It was a great addition. Served with roasted garlic mashed potatoes and it was a great meal!

One Hundred Thousand Calorie Bars

These were good but you have to be a SERIOUS sweet-tooth to appreciate them. They were a hit with others. Hubbie says they were too rich but managed to eat at least 4.

Puff Pastry Salmon

Hubbie says four and a half stars because it was "too simple". I give it SIX stars BECAUSE it was so simple! Would not change a thing. Great recipe! Quick. I brushed egg on the top of the pastry to make it a little more attractive.

Oven Fries

These were QUICK and an easy side dish or appetizer for drop in guests. I used olive oil instead of vegetable oil. Next time I will add some minced garlic for a little more taste. SO quick and easy!

We loved the Mango Salsa but would add just a little more cilantro to the recipe. We paired it with the Oven Fries recipe and they were wonderful together.

White Bean 'N' Barley Soup

Pretty good. I would use less beans and a little more stock, tweak the spices a bit. Overall for the first time making it the recipe was a good starting point. I look forward to making it again and again, with improvements each time.

Vegetarian Meatloaf with Vegetables

Good recipe but I would use twice the amount of tomato sauce and add garlic and butter to the roasted vegetables. Otherwise it was a wonderful addition to our favorites.
