Ham Tetrazzini

I used broccoli instead of parsley and pimento peppers, and no onion. Served over rice instead of noodles. Husband and kids devoured it! So easy, and saved my bacon on one of those "Aaahh, it's 4:30pm and I still haven't figured out dinner!" nights. Thank you Susan!

Zippy Baked Carrots Side Dish

Sooo good! I left off the bread crumbs/bacon topping and added broccoli with the carrots, the sauce was easy and everyone loved it. I thought the chili powder might be weird or too strong but it was perfect as written. Thanks for sharing!

Cheese-Stuffed Flank Steak

Well, it wasn't pretty but the taste was good! I think the strange appearance had more to do with the cut of flank steak I had plus my inexperience at any kind of rolled recipe like this...I used one small onion and we found the taste of it a bit overpowering. Thanks for sharing!

Pumpkin Chocolate Chip Muffins

I used 2 cups of pureed, cooked pumpkin I had in the freezer; was out of applesauce so I added 2 ripe, mashed bananas, and also added 1/2 tsp. ginger and 1/2 tsp. allspice, and used only 1 1/2 cups sugar. The bananas do kind of overshadow any pumpkin taste, but they are super moist and yummy anyhow! Next time I will leave them out.

This was pretty good at dinner, but amazing the next day! Next time I will allow more time to marinate. Left out the feta as it's a no-no while pregnant, but it'll bet it's even better with it.

Banana Crumb Muffins

Ohhh, are these ever good! I realised at the last second that I was out of eggs, so I found a vegan site that suggested 1/2 a banana was a good sub in baking...so I threw one more whole banana and voila! I also added 1 cup of chocolate chips, which was maybe too much but the hubby and kids sure like them! I think I would add 1/2 cup of chocolate chips next time instead. Thanks for the recipe!

The Amazing Swedish Meatball

This is my favourite recipe for swedish meatballs - I use less salt in the sauce but other than that they are perfect, and so easy! I sometimes use seasones pork sausages squeezed out of the wrappers because the generic ground pork from the grocery store always tastes too bland to me (in general, not in this recipe).

Blueberry Nut Oat Bran Muffins

These were very good - I followed a few suggestions and made the following changes though: half white flour, half whole wheat; two real eggs instead of egg substitute; and added one mashed banana. I don't have a food scale and had some difficulty figuring out the amount of chopped pecans it called for. I put in half a cup, and I think it could stand to have even more added. The two year old and the thirty year old both devoured them though, nice and moist, not too sweet!

Peanut Butter Easter Eggs

These taste fabulous, but I made mine quite small at first (about the size of lilliput eggs) and they wouldn't even stay on a toothpick in the chocolate. As a few other reviews mentioned, I found them to be pretty messy and time consuming. The tase was worth the hassle though!

Mom's 'Sweet 'n' Sours' Pork Ribs

I've never had much luck with ribs before but these were delicious! The only thing I didn't like about this recipe was that the smell of the meat boiling turned my pregnant stomach a little!
