About this Cook
I used to love cooking until I realized that with fancy dinners came LOTS of prep and dishes to wash afterwards! My family's tastes are simpler and wouldn't eat the fancy dinners I used to cook anyway. I choose to make my home and my family my profession. I have a schedule, chore list, etc. to keep me on task. I have been on a quest to simplify! I knew I was overcommitted when my children's basic needs became an interruption and a bother to me. I am so glad I found the courage to say "No!" to many good things. I wouldn't trade my relationship now with my family FOR ANYTHING!
My favorite things to cook
"From scratch" anything! Lots of protein - meaty stews, roasts, creamy soups. I am really making an effort to cut wayyy back on the amount of sugar, preservatives, damaged fats (hydrogenated oils, etc.), and man-made carbs that we consume.
My favorite family cooking traditions
Oyster stew on Christmas Eve! We also have an Old Mennonite heritage and make Vereniki and White Ham gravy - yum!
My cooking triumphs
I get raves on my cheesecakes! I can't post the recipes, however, because they are a collection of recipes from other sources. I once made a really killer Shepard's Pie from scratch out of my head but didn't write it down. I can't for the life of me remake it again!
My cooking tragedies
I once tried making fudge - the fudge and the pan went into the garbage. When my husband and I were first married I didn't have any hamburger and thought I'd try tuna instead in a hamburger helper - I'm lucky I'm still married!

Beef Curry Soup
Fabulous!! The recipe title states "SOUP" - it is not meant to be thick like stew - that is why it is SOUP. I used left over roast beef cut into cubes and omitted the vinegar. Other than that I followed the recipe and it was soooooooo good!! JUST the right amount of spice. I did not find it bland in the least, but the left roast was a heavily seasoned roast and maybe that had something to do with it? My family didn't like it, but they don't like curry. I love curry and I am LOVING this perfect soup!

Beth's Spicy Oatmeal Raisin Cookies
The taste if wonderful, but I can't get these off the cookie sheet as a cookie!! I have a ton of wonderful tasting crumbs. I refrigerated the dough thinking maybe I had let the butter get too soft, but that hasn't helped. UPDATE: I found success! IF YOUR COOKIES CRUMBLE: I finally finished off the dough by dropping the chilled dough by a scant tablespoon into mini-petite no-stick muffin tins (the ones that each cup holds about a tablespoon of batter). I baked them the recommended time and they came out as mini-petite muffins.

Egg and Cheese Puffs
These are wonderful! You can adjust the recipe to be just about whatever you want it to be. I hate making breakfast (and even eating it) but know it is so important. I made a batch of these substituting thawed, squeezed, chopped spinach and sauteed onions. They are perfect! They don't come out of the papers well, even though I sprayed the papers with non-stick cooking spray. Next time I will try making them in a well-seasoned stoneware muffin pan (without papers) and see if that helps.
