About this Cook
I was recently married in June 2006. My husband and I live near the water so we are always boating, wakeboarding or water-skiing during the summer. In the winter, my new hobby is cooking. My husband loves to eat and I'm the one he runs to when he's hungry. I was never really taught how to cook, so I decided that I have to teach myself. I love it! I love that I can put a twist on dishes to make it taste the way I want it to taste.
My favorite things to cook
So far... banana bread, casseroles, anything made in a slow cooker.
My cooking triumphs
I made French Dip sandwiches in a slow cooker. We invited our friends over and they totally love it! I was so proud of myself for trying something new and it being a success!
My cooking tragedies
None so far. I try to find out exactly what the ingredient is before I add it to my dish

Spanish Rice II
This tasted so good! And I was surprised how easy it was make. I took the advice from Jodi Lynn. Her recommendations made this dish excellent! I've already shared this recipe w/ my mom and I will definitely be making it again.

Easy Chicken Enchiladas
Wow! These were awesome! I added 2 small cans of diced green chilles and used a medium salsa. My husband and I like a kick to our foods. I'm not sure if I stuffed the tortillas enough, but I was able to make 10 enchiladas. I've already passed the recipe along to my co-workers and friends. I will definitely be making this dish again.

Stuffed Shells I
This dish was good. I thought it needed more of a zing, it was sort of bland. Next time I will use ricotta cheese instead of cottage cheese. I didn't like that it was runny/watery. And definately more mozzarella cheese. I will add it to the top along with the parmessan. Overall, it was easy to make (I made it the night before) My husband and best friend loved it, so I will be making this dish again. Thanks!
