Homemade Wonton Soup

Reviewed: Jan. 30, 2012
These were excellent. Makes a lot of wontons. I froze the leftovers as suggested..wax paper..then put in zip lock bag. I chopped up some water chestnuts for the filling and added extra plus frozen peas to the broth. I too boiled the wontons in water first then added the amount I wanted, to the simmering broth.

Cake Mix Cookies IV

Reviewed: Jan. 27, 2012
This is the 2nd time I've made these. The first time I was disappointed because they didn't taste like 'cookies'. The 2nd time, I pressed down on them with a spatula and the texture was great! I used yellow cake mix, lots of chocolate chips, some pecan chips.

Whole Wheat Chicken Salad Sandwiches

Reviewed: Jan. 15, 2012
I make my chicken pita sandwiches like this always. I usually use more yogurt than n/f mayo. A little curry powder and some diced apples or grapes added is nice too.

Curried Chicken Tea Sandwiches

Yummy recipe. I stuff the chicken salad in a toasted pita. I line the pita pockets with shredded lettuce first. I also use mostly n/f yogurt and just a T of mayo.

Rye Bread Party Pizzas

Reviewed: Aug. 22, 2011
Great party/holiday appetizer. Try adding some sliced green onions to the meat/cheese mixture while cooking. These also freeze well and reheat good in the oven at 350 for about 10-15 min.

Dry Rub for Ribs

Reviewed: Jul. 4, 2011
This is my 'go-to' rub recipe however I like to add ground coffee, but don't use salt in the rub cause the bbq sauce has enough!

Baked Kale Chips

Reviewed: Apr. 6, 2011
These were really good. BEWARE TOO MUCH SALT. I used only a dash but because the kale shrinks up in the oven, it becomes very concentrated. Watch the end time of cooking. I look forward to trying this again with VERY LITTLE salt and/or different seasonings!

The Best Steamed Asparagus

Great method. If the wine is too over-powering, use chicken broth.

Beef Fondue with Sauces

Reviewed: Oct. 21, 2010
Love me fondue! My mom turned me onto it in the 70's. More good sauces: teriyaki/honey, sweet & sour, balsamic vinegar/wine. We also do sliced chicken breast. Great Autumn/Winter feast!

Granny Kat's Pumpkin Roll

Reviewed: Sep. 25, 2010
I followed the recipe exactly except couldn't find canned pumpkin. Used canned pumpkin pie mix, cut sugar by half (used splenda) and lighted up on the spices. I used a baking pan and the batter didn't quite cover the pan. Worked out anyway.

Pumpkin Roll I

Reviewed: Sep. 25, 2010
All I could find was canned pumpkin pie mix. I merely reduced the sugar by 1/2 (used splenda) and lightened up on the spices.

Blueberry Crisp II

Reviewed: Jun. 12, 2010
maybe it was something I did which was to use 1/2 splenda, 1/2 sugar. The mixture never did get crumbly. I ended up using only half since I was more or less pulling apart a sticky dough in lumps to disperse on the crisp. I tried adding a little bit of oatmeal to make it crumbly..i don't know... don't think i will make again.

Broccoli Chicken Divan

Reviewed: Sep. 29, 2009
Great comfort food and not calorie-laden. I usually double the soup/sauce mixture and add saute'd onions and/or mushrooms. Throw in some fresh herbs. I also used reduced sodium cream mushroom/cream chicken soup.

Apple Crisp IV

Great recipe with a lot of potential, i.e. different prep ideas. I sliced 6 or so fresh apples, some oj dashed over to keep from browning, just basically 'thew' the other ing. in there without much measuring. Great idea! Next time I will try pressing 1/2 oat mix on bottom.

Seasoned Turkey Burgers

Reviewed: Aug. 15, 2009
Good recipe. My store carries only 1.25 lb packages of ground turkey so used about 2/3 pkg of onion soup mix, no soy sauce (didn't want too salty) and a tsp or 2 of steak sauce. Used egg white and also about 1/4 cup bread crumbs. Try using the beef onion soup mix- gives a 'beefier' taste.

Asian Chicken Salad

Reviewed: Jul. 6, 2009
Excellent dressing but use a little less oil. I use a rotisserie chicken to save time. I also add peapods/red bell pepper/mandarin oranges/toasted almonds. Yummy. Tastes like Wendy's asian dressing which is phenomenal. The noodles taste great prepared as stated but the oil splatters everywhere and it is pretty much a hassle. If you don't mind that..go for it !

Old Fashioned Potato Salad

Great basic recipe that stands by itself but I add the following to make it a bit more special: couple T bacon bits, handful of chopped fresh dill, squirt of dijon mustard. Once it's done, slice some extra hard boiled egg on top with a sprinkle of paprika

Quick Chicken Divan

Very good. Especially w/minor taste changes. I put cheese and breadcrumbs on 1/2 of casserole and leave 1/2 w/out. That way I can have the 'slimmer' version while my husband doesn't care about calories...
