Simple Whole Wheat Bread

Can't stop eating this bread! This is a very easy bread recipe. I used quick rise yeast but it still needed 20 mins for the first rise. Only have 2 pans so I cut it down to 24 servings and got two loaves that didn't rise up super high (probably too cool in my house with the a/c on). Instead of bread flour I used all whole wheat flour because I prefer the taste and am trying to use less white flour in my diet. Make sure to use a good quality honey..I used an imported Hungarian wildflower variety. I'm sure orange blossom honey would be really good too. Not too big on sweet bread so I reduced the amount. On the advice of another reviewer I mixed the whole thing in my Kitchen-Aide mixer with the dough hook. The final mix before going into the pans took about 5-10 mins. It would be fun to add oats or ground flax seed just to play with the texture. I think you could also do a rosemary parmesan cheese mix for a nice savory twist, or brown sugar, raisins and cinnamon for a sweet version. Definitely try this recipe..it was a 4 hour project for me but lots of fun because the results are delicious!

Roasted Garlic Cauliflower

Wow! This rocks! I made it with cauliflower and broccoli and used more olive oil than the recipe called for. I also added bread crumbs to the parm cheese and mixed it all in a big bowl. Roasted it in glass dish at 400 for about 45 mins. I covered it with foil for the first 30 mins and then uncovered for the remaining time. It went great with baked flounder and brown rice. I think this recipe would be great with carrots too! Thanks for sharing..so simple and delicious!

Slow Cooker Latin Chicken

Absolutely delicious! On the advice of other reviews I substituted one can of corn for one can of beans and increased the salsa. I used Newman's Own tequila lime salsa, added a sliced poblano pepper and a sliced onion. Instead of just thighs, I used chicken quarters (legs and thighs). Cooked it on high for 2 hours, then low for another 3 hours. Served this with white rice and broccoli. So good! I've been looking for a latin chicken dish that is similar to the ones served at the hole-in-the-wall cantinas here in south Florida and this is it! It is so good, I can't stop eating even though I'm full!

Venison Bacon Burgers

Delicious!! I just recently discovered venison and absolutely love it. I had 12 oz of ground venison so I used 3 slices nitrate-free bacon, red onion and fresh garlic instead of the shallots. I added a bit of butter to the pan after I cooked the bacon and sweated the onion and garlic. I used half a beaten egg and some panko bread crumbs too because my meat seemed a bit sticky. I also added some dried thyme based on another recipe I read on this site. The pan looked too good with all the brown bits and bacon grease/butter so I added a bit of olive oil and seared the burgers that way. Just have to keep a close eye on the heat because they cook quickly..about 4 mins on each side was maximum to still get 3 juicy burgers. Added some sliced provolone on top..a nice mild cheese to counter the meaty flavors was perfect. Loved the smokiness of the bacon, the freshness of the parsley and the beautifully different flavor of venison. Ive seen so many recipes with reviews that state all the tricks they used to mask the flavor of the venison. If you have to mask it..you probably just don't enjoy eating it lol. This recipe was great..thanks so much for sharing it!

Restaurant-Style Buffalo Chicken Wings

Best wings ever! I'm from NY and went to college upstate where buffalo wings were invented. This recipe is great..very authentic. i didn't even bother with the flour because i like my wings dry and crispy with plenty of sauce. the flour coating just gets a bit too heavy for me and was never used in ny. i fried my wings in canola oil and kept them warm in the oven at 250 while i fried the rest in batches. trick is to fry in small batches so wings have room to move. a crowded pot means wings will take longer to cook, the oil temp will drop and you'll get greasy results. i doubled the sauce and it was more than enough for about 15 wings. toss them with the sauce in a large bowl, don't stir and serve immediately. i love my wings with blue cheese dressing and celery. slice the celery in stalks and store it in cold ice water in fridge while preparing wings. the crunchy ice cold celery cuts the kick of the hot sauce perfectly! great recipe, you won't be disappointed!

German Apple Cake I

YUM!!! I always love simple recipes that don't use boxed cake mixes, pudding mixes etc. This is such an excellent cake..tastes like something grandma would make. I cut the entire recipe in half and baked it in an 8x8 pan for about 40 mins. I used grape seed oil and half brown and half white sugar but didn't change anything else. Next time would probably reduce the sugar but if you like your cakes sweet then stick with the original. I also used granny smith apples because they hold their shape and I loved the chunks of apples loaded in every bite. One of the best apple cakes I have ever eaten..thanks so much for sharing!

Chocolate Frosting I

Yum! I doubled this recipe and it was just barely enough to frost a 2-layer cake. It has a nice rich chocolate flavor without being overly sweet and sticky like store-bought frosting. I creamed the butter at room temp but after adding the cocoa, sugar, salt and water (and a little vanilla) it was a little too soft to spread properly so I refridged it for about 15 mins. It set up perfectly and was easy to spread on my chocolate cake. Absolutely delicious on "Sandy's Chocolate Cake" recipe on this site. Thanks for sharing such an easy recipe!

Sandy's Chocolate Cake

Delicious!! This recipe is awesome..I didn't change a thing other than to scale down the recipe to 9 servings so I could make a 2 layer cake instead of 3. My cake came out light, fluffy and not overly sweet. The brown sugar gave a nice rich flavor without being heavy. I also liked that this cake had no oil and the only fat came from the sour cream. The frosting I used was not the recipe that came with the cake, it was a basic chocolate frosting made with butter, cocoa and sugar. Thank-you for sharing this recipe..it was so easy and straightforward but tastes like a fancy bakery cake! No more boxed cake mix for me!

Red Cabbage

Oh I just love red cabbage..so much better than the stuff from the jar! This is a great recipe..I just tweaked it a tiny bit. Used 2 apples and added a diced onion which I sauteed in butter first, then added everything else. Instead of white vinegar I used apple cider vinegar just because I love the flavor of it so much more than white. I also added a bay leaf and some caraway seeds and cooked it all for an hour and a half. It was surprising not to see any salt or pepper listed as part of the recipe..definitely needs both. But overall a wonderful comfort food side dish that went really well with pork tenderloin and roasted acorn squash. Thanks for sharing..will make again!

Sugar Cookies

Really great cookies..came out light and fluffy, not overly sweet. I would either use salted butter next time or add 1/4 teaspoon salt just to enhance the flavor a bit. These would be delicious with a bit of lemon zest as well. I will be making these for Christmas and will frost with cream cheese frosting. Thanks for sharing such an easy recipe!

Lemony Garlic Shrimp with Pasta

This was very nice! I added frozen spinach, used fresh parsley and added some fresh oregano as well. In addition to the shrimp I used some fresh sea scallops. I overcooked the spinach a bit but in general the whole dish was very good. Easy, quick and tasty recipe..will keep this one around!

Apple Crisp II

Loooove this!I used 6 granny smith apples and piled them in a pie plate rather than a 9x13 dish. Instead of butter I used Can't Believe It's Not Butter sticks. Worked great! The topping turns out nice and crunchy and I threw in some salt, cinnamon and nutmeg for a little added spice. I also reduced the sugar in the apples to 3/4 cup since the topping is very sweet. Probably could even do with only 1/2 cup sugar. My apples were very tart and the crisp still came out nicely sweet, almost a bit too much. Definitely do not add any water..the juice from the apples combined with the sugar is more than enough to make a beautiful filling. I love this recipe..it's so easy and came out great..fool-proof baking instructions as well. Thanks!

Slow Cooker Green Beans, Ham and Potatoes

Yum! My grocery store only had smoked ham hocks and they looked dry and unappealing so I used pork chops instead. Dredged the chops in flour and browned them before adding to the slow cooker. Also used chicken stock instead of water and bouillon and just threw it all into the slow cooker at once. Instead of garlic powder I used minced fresh garlic and also added a Tbsp of brown sugar and a splash of cider vinegar to add a little tang. Cooked on high for just over 3 hours and it came out great! Awesome comfort food with a delicious flavor and soft texture. Before serving I took some of the cooking liquid and reduced it in a pan with white wine and sour cream to make a nice gravy. Yukon gold potatoes and fresh green beans were perfect for this. I'm sure it would also be delicious with ham or smoked sausage. Maybe next time!

Lemon Sauce for Salmon Patties

Yum! Made this sauce to go with the Oregon Salmon Patties from this site. I used rice milk because of a whey allergy and added dill. I think some white wine would also be a nice addition, will try that next time. I love the simplicity of this sauce and it came together really quickly. Be sure to whisk quickly and have all your ingredients ready to go because you can easily burn this sauce if you let it sit on the heat. Thanks for sharing, will try this on tilapia and probably shrimp too!

Best Ever Muffins

I love how easy this recipe is and how much room there is to experiment. I used half white and half brown sugar, added cinnamon and nutmeg and fresh blueberries. Sprinkled cinnamon sugar on top before baking too. Make sure to coat the blueberries in flour before you add them to the batter so that the batter doesn't turn that awful blueish green color. I also had to substitute rice milk for the regular milk due to a whey allergy but it works fine and is lower in fat. I'm looking forward to making these muffins again and trying different variations such as whole wheat flour, wheat germ, apples and walnuts, maybe carrot raisin or banana berry. Thanks for sharing..everyone can make great muffins using this recipe!

Lithuanian Kugela

Flour? No way! Only the starch from the potatoes is necessary. By the way, I am 100% Lithuanian and grew up on this stuff and it's called Kugelis. The Lithuanian language gives gender to the noun. Kugelis is a masculine word, ending it with an "a" would change it to a feminine word and therefore it is incorrect. But thanks for sharing the recipe..it's a pretty good one. For anyone who thought it was bland..yeah it's supposed to be that way, all Lithuanian food is bland and there is never ever any kind of cheese or garlic salt in Kugelis.

Good Old Fashioned Pancakes

I was a bit skeptical when I saw how thick these pancakes were, expecting them to be heavy and dense but they weren't at all. Light, fluffy and delicious is all I can say! I used home-made buttermilk (1 Tbsp lemon juice in one cup milk, let sit 5 min) but didn't change anything else. These should definitely be made on a griddle because I had some trouble getting them to cook through without burning them on my regular stainless pan. I will invest in a griddle because these pancakes are awesome and I will make them again. I also added fresh blueberries..I coated them with a little flour before adding to the batter and folded them in carefully. That way they don't turn the batter blue..works for all types of batters with fresh fruit!

Grilled Marinated Shrimp

Better than shrimp you get at a restaurant! This was a beautifully simple and delicious marinade. I followed the recipe but increased the lemon juice since I love lemon and seafood together. I also used fresh oregano since it grows in my herb garden. Always use more fresh than dried herbs when recipe calls for dried. A few minutes on the grill and it was awesome! I made extra to have leftovers for tomorrow but ended up eating everything because it was so good!! I would love to try this marinade on chicken or fish, just marinate the fish for 30 mins max or it gets mushy. Chicken could go a couple hours. Thanks for sharing this recipe..it will now be a grilling staple!!

Perfect Baked Jerk Chicken

Oh I wish I tasted this before I cooked my chicken with it because all I could taste was the salt because it overpowered everything else. I used fresh garlic and onion and doubled the cayenne because I like things spicy but the salt just killed it. I will try this recipe again but use way less salt!
