Zucchini Cornbread Casserole
I loved this. It was a nice mix of cornbread, cheese, and zucchini all rolled into one. I combined cheddar and monterey jack cheeses for flavor. Didn't even notice the zucchini, a great way to sneak in a veggie for kids! Also, great the next day warmed up in the microwave.

Marinated Tuna Steak
The marinade to this was very good. However, I would recommend buying frozen tuna steaks as I bought them fresh and could not get the fishy smell off my grill for a couple days, even with the help of some lemon juice.

Spinach and Black Bean Pasta
I liked this alot. You could even eat the sauce like a soup, it was that tasty even without adding the pasta.
