Pork and Potatoes

My mother made this for us as children and I still make today. We cooked the chops the same but served the gravy over rice and corn instead of the potato. I will try this way next time. Thanks for the recipe.

Jiffy Jambalaya

This was easy, inexpensive and tasted great. I used turkey kielbasa as it is lower in fat. I also doubled the veggies and added two chipolte peppers (diced very small) for some added heat. This dish is a winner.

Jiffy Jambalaya

This was easy, inexpensive and a huge hit with my husband. I used Turkey kielbasa as it is lower in fat. I also doubled the amount of veggies and added 2 chipolte peppers (diced very small) for some added spice. This will be a regular in our home.

Roasted Pork Loin

I like Rosemary but it was too over powering in this dish. I wouldn't make it again. The gravy was the only think that saved the meal. I added sliced potatoes, carrots, onion and celery to the dish before putting it in the oven. The veggies we just ok as well.

Beer Butt Chicken

I was so excited to make this recipe. I cook whole chickens in the oven all the time but had never tried the beer can. I tried it with the rack and was so VERY disappointed in the lack of flavor. I will try again and make using the can only put Rosemary under the skin. Stuff the chicken with fresh rosemary, lemon slices and sliced onion. I do this on a broiler pan in the oven and it is the best chicken ever. Use the beer can but spray the outside of the chicken with cooking spray and season with seasoning salt and dried rosemary. Stuff as I indicated before. Will get 10 times the flavor and is always a crowd pleaser. I have made this dish over 100 times and everyone has raved over it.
