Cinnamon Streusel Orange Muffins
Excellent recipe as is. I think next time I would make them, I would not fill my muffin cups as full. I would make 14 muffins instead of 12 so that way all that yummy streusel topping doesn't fall off while expanding during baking! I used a cookie scoop to try to get the right amount of batter in the muffin before putting in the cinnamon, brown sugar filling and that seemed to be the right amount. I also had some fresh cranberries, I wanted to use up from a farmers market, so I cut them in half and shoved them into a few of the muffins for an experiment and that added some extra flavor if you like cranberries!

Chicken Enchiladas V
I really liked this recipe. I felt like it could use more than 1 cup of cheese since my family lives close to Wisconsin and loves their cheese, I had to add more cheese!! It is very easy as long as you already have some cooked chicken. I like to use the chicken leftover from making homemade chicken soup. I might try next time to add a red enchilada sauce on the tortillas under the cheese to give it a totally different flavor with the same basic recipe.

White Chocolate, Chocolate Cookies
Very very chocolatey. They taste like an oreo cookie but a soft version. Delightful with or without chips in them. I put in peppermint chips in half the dough to experiment and it was a pleasant suprise.
