Peanut Butter Cup Cookies

Oh boy are these good. I think these are my new favorite cookies, seriously. Tip: stick the pb cups in the fridge while you make the cookies and bake them. They are MUCH easier to get into the cookie that way. Otherwise, they start to melt as you are pushing them in. Also, while these are yummy all the time, they are soooo good while still warm because the pb cup is still gooey... A must have for peanut butter lovers (like me!)

Cocoa Rum Balls

These are so shockingly good it is unreal! I would give 6 stars if I could. They truly are better after a few days. The texture solidifies a bit more and the flavors all combine into this wonderful mix, rather than any one flavor being dominant (the way the rum is at first). A tip - the texture is really best if you can mix with your hands, but it will get your hands a total mess because the cookie mix is very, very sticky at first. It is best if you have another person to do the rolling in the powdered sugar or it gets to be a real mess!

Cranberry Sauce Extraordinaire

OH MY GOSH this is amazing. The smell is intoxicating and the taste is to die for. Seriously. I made this to take to a Thanksgiving dinner and it almost didn't make it out of the house. My husband and I were just eating it warm right out of the pot! I did take the advice of other raters and used the food processor - wouldn't do it any other way. This is so good I plan to make some every month this winter just to eat with my breakfast! This is THE BEST cranberry sauce I have EVER, EVER had.

Mexican Pasta

I think if you like chili mac with veggies, you'll like this. I did make modifications, but only because I didn't have all the ingredients. I omitted the bell pepper, olives and taco seasoning, and used dried garlic and onion. I also made my own seasoning out of lime juice, oregano, chili powder, and crushed red pepper. I used fresh tomatoes and about 1/2 c. of medium salsa. I used flax pasta, and topped the dish off with colby jack cheese. It was DELISH as well as filling, quick, easy and inexpensive. I do recommend trying it out.

Salmon Fillets with Creamy Dill

This is crazy good. I also used yogurt for most of the mayo, and cut the sauce down by maybe 1/3. It was just enough to totally cover 3 salmon steaks, and it was wonderful. Best creamy dill I've had!

White Chocolate Snack Mix

This stuff is hands-down addictive. I made 4 batches and packaged in bags as Christmas presents. 3 of the people literally finished off the bag while I was still at their house. I followed some other suggestions and reduced white chocolate to 1 & 1/2 bags, rather than 2 full. I also used a mix of peanut and regular M&Ms. It helps if you have someone to help stir while you pour the white chocolate over the other ingredients. Also, do NOT use regular chocolate instead!! I tried this on the last batch, because I ran out of white chocolate. It does not taste as good, and it never hardens correctly so your hands get all gooey when you try to eat it. Try this snack mix - but only if you really want something you can't stay away from!

Real N'awlins Muffuletta

This olive salad is PERFECT for the muffuletta sandwich! We had these from Central Grocery on our honeymoon, and I was trying to recreate as an anniversary present. I ommitted the cauliflower, carrots, celery seed and canola oil. I found a bakery here that makes muffuletta bread and went to a good deli to get salami, coppa, and provolone. The sandwich was so good I could hear the blues and smell the gulf! Tip: don't be temped to skimp on the amount of olive oil. Part of the beauty of the sandwich is the olive salad soaking into the dense bread to make it moist. If you haven't tried this yet... you should!

Sausage Hash Brown Bake

Good stuff! Very much comfort food, and very easy to make. It was very creamy and filling, but a bit salty. I did turn bake temp up to 375 for the first 45 minutes, and I mixed my sausage in (rather than layering it). I also used a package of French Onion dip (an all-natural brand with no MSG or other weird unpronouncable stuff) and mixed with the sour cream, rather than a container of pre-made dip. I would recommend. It is a nice change of pace from the usual corn-flakes-on-top potato casserole.

Apple-Stuffed Acorn Squash

I thought this recipe was actually very good. It was easy and quick to prepare, and a great way to use the fall foods. I did modify only a little, by changing the oven temp. to 450 for the last half of the cook time. I didn't melt the butter (the oven will do that!) but cut into small chunks and set on the apples, and then drizzled the honey on. I didn't use as much honey, but I'm sure that would be wonderful - I'm just trying to cut down on sugars. I also added nutmeg to the cinnamon. The end result was good - tender and tasty, without being too sweet or buttery. My husband really liked it, as well, and he is never a big fan of veggies. Thanks for the creative idea!
