Spinach and Potato Frittata
My husband and I loved this! I did season the potatoes with plenty of salt and pepper while they were cooking, but other than that, I followed the recipe as written. This is definitely going into our "Meatless Monday" rotation.

Chicken Enchiladas IV
My family loved this and I loved how easy it was to put together. I followed the recipe as written with the exception of using a Southwest seasoning mix instead of cumin and cilantro. I'll definitely put this one in the rotation. Thanks.

Best Spanish Rice
This was the perfect Spanish Rice dish for our family. Even I liked it and I'm not a big rice fan. We'll definitely make this again.
