Manicotti Alla Romana
The outcome of this dish is well worth the effort. It's not hard, but just a lot of steps. I followed one reviewer's tip about slicing the noodle in half to fill and then placing seam-side down. A huge time saver and not so messy. Just an excellent homemade meal.

Slow-Cooker Chicken Tortilla Soup
The good thing about this recipe is that it's relatively healthy. The bad part is that it's a really strange tasting chicken tortilla soup. It seems to be missing something in the flavor department.

Baked Ziti I
This is easy to make, but man does it taste rich! Very filling. It would be great as a meal served for guests and it does make a lot. We are a family of 3 so we'll have lots of leftovers. Tastes like lasagna, but faster to make. I used sausage instead of beef and it was great.
