Pumpkin Soup

Very good soup! I would recommend using the original recipe. I halved due to the 9 servings, but was making for lunch so it was more like 4 or 5 bowls. Hearty and easy to make. I garnished with some toasted pumpkin seeds and ground black pepper.

Parmesan-Black Pepper Arborio Rice Pilaf

Oh, yum! This was fantastic! I cooked a bit longer, but left it a bit "toothy" because our family isn't big on al dente. I disagree with other reviewers about the parmesan. I love fresh, but didn't have any so used the old parm-in-a-can and it was soooo rich and creamy and perfect! So much better than stirring a perfect risoto. Definitely try this one! All I added was some garlic. mmmmmmmmmm. Great compliment to slow-cooker chicken.

Italian Chicken and Chickpeas

This was great and smelled so good while cooking! If you don't have chickpeas, I think this would be great over rice. Made my Southern home smell Italian! Thanks, Kristin. Our family likes a little heat and this was just perfect.

Julia's Easy Slow Cooker Chicken

Very good! I had no onion soup mix, so I "souped it up" with garlic powder, pepper, a bit of cayanne and a sliced onion. Don't let other reviews make you afraid of the milk. I actually used heavy cream and a bit of chicken stock. I used new red potatoes because they needed to be cooked, and left them whole. Perfect after 4 hours on high. Thanks, Julia!

Herb Butter

Yummy! Had no fresh herbs, so used dried, used cayenne instead of red pepper flakes. Smeared on grilled corn on the cob and grilled bread (hamburger buns) and they were EXCELLENT. Super easy to do. Just put the butter or margarine out to soften while you prepare other foods. Yum! Thanks, Dixie.

Potato Cheese Casserole

This is a good, cheesy side dish. It went well with a roast and peas. I'm not sure why the other reviewers mention their onion prep, since the recipe doesn't call for any. I stayed true to form, except I had no peppers. It works and is tasty. Don't skip the pimentos; they balance out all the cheese. Mixing in my stand-up gave it great texture.

Egyptian Feta Cheese Omelet Roll

Very good and basic recipe. I halved and just made a regular omelette. I buy feta preseasoned with garlic and herbs. Yum. I did add some bacon bits. Great for brunch!

Chicken Pot Pie IX

Just TOO dry. It was a lot of work to come out so dry. I read others' reviews and increased the sauce, but it was still VERY dry. Don't thicken the sauce; maybe that will do it.

Mushroom Saute

This was a very good side dish. Little too much butter for my taste; next time I will use half butter and half olive oil. Don't fear the nutmeg! NO WAY does it make it sweet. Try it; you'll love it! I served with some spicy blackened snapper and it was just right. Would go with almost any dish. Thanks for sharing it!

Cajun Style Blackened Snapper

This was very good and it was fun to cook! I took the iron skillet on the outdoor grill route as my smoke alarm is very unforgiving. I would agree to take it easy on the salt. I also used olive oil instead of butter for dietary reasons. Just delicious!

Shrimp Dip I

Really easy, and really good. I just added a touch of cajun seasoning. A warning; it has enough salt on it's own, so don't serve with salty chips or crackers. Buttery crackers or bread would be best.

Slow Cooker Chicken and Dumplings

I was skeptical, as I have spent many long hours making Chicken and Dumplings from scratch, but this was GREAT! A wonderful, easy, weeknight meal that the family loved. I followed the recipe, except I used broth instead of water. I also used 2 breasts and one can of soup. I highly recommend it. Thanks for sharing!

Skillet Pork Chops with Potatoes and Onion

Very, very tasty! Followed the recipe with a small addition of some garlic powder. The whole family loved this. I used bone-in chops. Contrary to some other suggestions, I didn't precook anything. I did make sure to THINLY slice the potatoes, as per the recipe. I also THINLY sliced the onions. Definitely in our rotation. Pretty sure you could omit the flouring of the chops if you so desire.

Chicken and Rice Casserole II

A good, stick to your ribs, family dinner. I followed the recipe exactly and it was very good. The picky kids loved it. I steamed broccoli for the side. Next time, I'll spice it up a bit for my family's taste, but it's VERY good as is. Worth the time and leaves a nice chicken stock for soups and other recipes.

Simple But Awesome Lemon Pepper Pork Chops

Delicious! The only change I made was to add some minced garlic before closing the foil. YUM! Will definitely do these again. I used two bone-in chops and cooked for 35 minutes. Terrific with mashed potatoes.

White Bean Chicken Chili

Wonderful! I had no tomitillos or salsa verde, so just skipped them. I diced some jalepenos and simmered a bit longer than the recipe called for. LOVED it! Topped with a little grated cheese and tortilla chips. The onions, garlic and tomatoes are a MUST!

Enchiladas

Really good enchildas. I took others' advice and used the Red Enchilada Sauce Recipe, substituting a chopped tomato for salsa (less chunks). I also added taco seasoning to the beef. If you like spicy, you definitely need to add some spice of your liking. Following the recipe it is kid friendly, except for the onions (depending on your kid)! Overall, delicious and a great recipe!
