About this Cook
I am a registered nurse, married, CFBC (child free by choice).
My favorite things to cook
Anything Italian! I also love using my slow cooker. My husband is a picky eater, though, so it's hard to come up with recipes that both of us will enjoy.
My favorite family cooking traditions
My grandma makes the BEST meatballs in the world. She finally showed me how to make them about 2 years ago. They were good but nowhere near hers.
My cooking triumphs
Hosting Thanksgiving and Easter dinners for my large extended family
My cooking tragedies
A coworker had given me a recipe for stuffed peppers that you boil rather than bake. The meat and the peppers all turned gray and they tasted almost as bad as they looked! What's worse, the recipe made about 2 dozen of these nasty looking peppers. My husband has refused to eat stuffed peppers ever since (even though I promptly "round-filed" that recipe!).

To Die For Blueberry Muffins
These muffins were terrific! The reason for the 4 stars is the topping. You could definitely get away with making 1/2 of the topping recipe and still have plenty. Personally I thought the topping was too sugary and somewhat overpowered the other flavors, so I ended up scraping a lot of the topping off mine. Next time I will try the muffins without it. The muffins themselves though...OMG! So good! I added an extra 1/2 to 3/4 cup of blueberries to use them up and it really added to the from-the-bakery flavor. I will definitely be adding this recipe to my keeper file.

Slow Cooker Chicken Cacciatore
This seemed a little bland. Maybe using a different brand of pasta sauce or adding a little Italian seasoning would make a difference? I think I will give it one more shot. This time, though, I will definitely add less mushrooms; 8 oz. is a LOT of mushrooms, especially if you're not a mushroom aficionado to begin with. My husband, who loves mushrooms, thought it was a little much, also.

Cantonese Dinner
I thought this dish had potential but seemed a little watered-down and bland. I may give it another shot but I think I will cut the amount of mushrooms and add pineapple just before serving. It's lacking something but I can't put my finger on what. I'm hoping the pineapple will help.
