Blackened Tilapia with Secret Hobo Spices

Holy Hades, That was too hot for me...I did use Hot Hungarian Paprika at the suggested amount...I'll probably just buy a rub next time. It was great learning how to blacken fish, though.

Roast Sticky Chicken-Rotisserie Style

Wow! Fall-off-the-bone-deliciousness. I used the full amount of rub on 1 fryer chicken; was pressed for time, so let chicken sit in fridge 4 hours, cooked at 250 for 2 hours, 350 for 2 hours and 450 for half an hour to an hour (lost track of time). This didn't leave any juice in the bottom of the pan because of the high heat, but it turned out so good. May try the same rub on a turkey. Thank you thank you for the recipe!

Yum! I agree with others: at least double the mushrooms--they are delicious, but they shrink a lot. I also liked doing a lemon-butter-garlic sauce in the bottom of the pan. Thank you for the recipe!

Spicy Basil Chicken

We really like this recipe with beef, using a tender cut. I've followed a few suggestions: 3 T fish sauce instead of oyster sauce and garlic powder instead of garlic salt. When adding the basil, I turn off the heat, throw the basil in the pan and cover. I let that sit for 5-10 minutes, stirring now and then; that way it gets less leafy. Thank you for the recipe!

Delicious Ham and Potato Soup

My husband loved this! He usually wants more than just soup, but this was hearty enough to fill him up without anything on the side. I accidentally threw in an extra cup of milk, so I added a little cheddar to thicken and it turned out fine. I like that this recipe is versatile enough to be mixed up a bit :-)

This was very good and worked well as leftovers worked into other dishes. It doesn't have the traditional bbq chicken flavor though; you need to add sauce to obtain that.

Rosemary Red Potatoes

These are good. I used creamer potatoes (purple skin, almost blue on the inside)--I'd never seen anything like it before. The color turned off my husband, who wouldn't touch them, but I thought they tasted pretty good, if not a tad soft instead of crispy. I'll follow the recipe and use red potatoes next time.
