Mom's Cucumber Salad

Brought this to a potluck cookout and it was well received - a little runny, but cucumbers tend to do that I guess. I did "enhance" this recipe with the suggested modifications, which is why I gave it 4 rather than 5 stars.

Raspberry Oatmeal Bars

This is a very good recipe for a quick, tasty treat. Subsituting the lemon juice in place of the water is a good idea and it enhanced the raspberry filling. You do need to wait for it to coo completely, or else you will need a scoop to get it out of the pan.

Swiss Chicken Casserole II

This is pretty good. I hold on rating 5 stars unless a recipe really wows me, but in this case I actually wish I could rate it 4 1/2 - and the extra half star would be for the ease of preparing this recipe. The flavor is good. Unlike others, I had no trouble with the stuffing drying out. I have to wonder if those having that problem are not covering the dish properly. It seems as though the steam under the foil keeps the stuffing moist. The only changes I made was slight - I used extra milk with the soup mix just because we prefer things saucier. Also, I cut each chicken breast in three pieces, making it a little more like a casserole. In all, it's well worth the few minutes it takes to put together.

Cranberry Apple Pie II

This pie is a good choice for the Thanksgiving dessert buffet. I give three stars only because the cranberries over powered the apples and it needed more spice. But, with the right balance it will be a great pie.

Pumpkin Cookies VI

I struggled with the choice between four stars or five, and opted for four only because I hold five star recipes to an extremely high standard and dont give that away lightly. Anyway, first I should confess that I do not like pumpkin. I chose to make these cookies in the spirit of Thanksgiving, expecting to skip over them for some apple pie at dessert time. BUT, when other pumpkin haters started gobbling them up, I gave in and tried them. Yum ! I was pleasantly surprised. The only problem I had was the cook time. I took them out after 11 minutes and let them cool, only to realize that they were not done. So I put them back in for a bit and I still think they could have cooked longer. Very gooey. Could be my oven I 'spose. The oatmeal texture in a gooey cookie takes some warming up to, since they are so cakelike. But I did end up eating about 6, so I guess it's easy to overlook!

Boilermaker Tailgate Chili

WOW this chili was hot!! I can tolerate spicy food, but something was on fire in this one. It may be because I had no ceyenne pepper and substituted ground red pepper. If you have a stomach lining, and you care to reserve a portion of it, I recommend against the red pepper. Also, there are way too many ingredients. I was making this for super bowl and I think it was halftime before I finished chopping and measuring. However, once I got my tastebuds back the chili did have a delicious flavor.

Blackberry and Blueberry Pie

this was good, but if you are looking to please a blueberry pie lover don't make this pie. My b/f wanted a blueberry pie and I thought I would spice it up with this recipe. He was disappointed - I think mainly because of the seeds in the blackberries. Or maybe just because it didnt taste like blueberry pie.

Boston Baked Beans

Raw Veggie Picnic Salad

I had to prepare a salad for a cookout and wanted to find a recipe for something other than the typical pasta or potato. I saw the star rating and read the reviews for this salad and immediately my pessimistic side thought no salad made with a combo of these odd ingredients could ever be that good. So I made the salad, partly in a effort to counter those who have continued to hail it's excellence. My first complaint was the estimated prep time of 20 minutes. It took me quite a bit longer than that, but I can be easily distracted and perhaps I use a slower cutting/chopping technique. But in the end, I was forced to accept defeat, for everyone at the cookout did, in fact, rave about this salad and inquire as to who made it. Yes, it really is that good.

Slow-Cooked Chili

First, I have to admit that I changed somethings about this recipe. Not the least of which was the ground beef. We do not eat red meat, so I made this with ground turkey. When I browned the turkey, I added cumin and garlic salt - as some had suggested the flavor was bland. I did not have any greeen peppers, but I did have the diced tomatoes & green pepper canned so I used that. I also used a chili ready tomato sauce which had added seasonings. To give it a flavor boost, I added about a half teaspoon of crushed red pepper. The end result was pretty good. However, it seemed a little bit dry. The recipe called for one 8 oz can of tomato sauce and I used about 2/3 of a 15oz can. Next time I will use the whole can. One other somewhat important aspect was that the mixture filled my crockpot to the top and I had a tough time blending it all in because it was so full. It would probably be easier to mix it in something first and then add to the crock pot. Just a thought.

Corn Chowder I

Good simple chowder - I didn't change anything (well, at least not intentionally. I over cooked the bacon trying to make it 'very crispy' and didn't like the extra smoked flavor= my own fault tho). This recipe is siimple and satisfying and makes a lot of soup -promised, it is also very good the next day!

Slow Cooker Chicken Curry

this recipe was easy enough to make, but I really didn't like the result. I would have named it chicken stew with curry. I am a big curry fan and the taste of this dish does not satisfy my curry cravings - as others have pointed out, it's rather bland.
