Downeast Maine Pumpkin Bread

Made this a second time and definitely much better with these changes: Replace half the oil with 1/2 cup applesauce - much less fat and you won't even notice. Reduce sugar to 2 cups - plenty sweet! Can't imagine it with 3 cups! Double all spices - I might even triple next time. ----------- Very good recipe. I think it would be better with more spices and less fat. For most recipes, I cut the fat in half and use applesauce or pumpkin puree or yogourt to make up the other half. Cuts the fat significantly.

Purple Plum Pie

Yum! I took another reviewers advice and did not use the pastry shell (didn't have on on hand). So it was more of a crisp than a pie. I also added 1 cup fresh blueberries that I had on hand. Delicious!

Peach Cobbler II

Great recipe but only with revisions, hence only 4 stars. I followed another reviewers advice and I can't imagine it would have been successful had I not. I used 9 peaches - that's a whole lot more than 3!! I only used 1 cup sugar in the peaches which was more than ample, and 2 tsp. cinnamon. I only used 3/4 cup sugar in the batter, again more than sufficient. I only used 1 cup of boiling water - 2 cups would definitely have been too much. My peaches were very ripe so there was a lot of juice from the peaches. I baked it in a 9 x 13 inch pan.

Apple Bavarian Torte

Well, here's a strange one. My husand HATES butter - won't eat anything with butter in it, even if he can't taste it - just knowing there's butter in something will keep him away. So I didn't tell him there was butter in the crust and was nervous because I found it very buttery tasting - but he loved it and didn't mention anything about it being buttery tasting. I asked him to rate it and he gave it 5 stars!! The irony is I LOVE butter - and yet I found the crust tasted much too buttery and the filling was just OK. I gave it 3 stars. I've made much better desserts. So I chose the happy medium and gave it 4 stars.

Chocolate Chip Banana Muffins

Review #2 - made these a second time except I added pecans and made it into a loaf. Fantastic again. Review #1 - Made them exactly as directed and they were fantastic! Only thing is I did not get anywhere near 16 muffing - only got 10 - as I like my muffins with nice big muffin tops so I fill them quite full. And like another reviewer, I don't use paper liners - just non-stick pan rubbed with a bit of butter. Much better!

Chicken Stew with Dumplings

This was fabulous and easy! I made a few slight changes: I added the sale and 2 cloves garlic and 1/2 an onion to the water when the chicken was boiling - makes the chicken much more flavourful. I also added about 1 1/2 cups mushrooms (I had portabellos on hand) - sauteed them first with a bit of olive oil and a clove of garlic and added this to the stew. I used another reviewers suggestion and used basil and sage in the dumplings instead of parsley. Delicious!! My husband loved it - daughter loved it.

Bean Soup With Kale

Delicious. As other reviewers have mentioned, be sure to chop the kale fine as it is a fairly tough green, and I also cooked it longer, again because it was still tough after 15 minutes. It did lose it's beautiful bright green colour but at least it was softer. Flavour of this soup is fantastic. I used white kidney beans as I couldn't find the ones asked for. Worked great.

Apple Crisp II

Would give it 5 stars except it was too sweet for our liking. Even my 19yr old daughter thought so. I would reduce the sugar to 3/4 in both the filling and topping. Maybe even 1/2 a cup in the filling depending on the type of apple used. I did use the water and it worked out just fine.

Peach Pie

Simple and easy to make, and delicious, but a couple of key changes: 1) I used 1/2 the sugar which was plenty 2) I would blanch and peel the peaches - much more palatable than getting peach skin in your teeth!

DANGER, DANGER! These are WAY too good!! Hubby and I ate the whole pan ourselves in 2 days. Yikes! BTW: I don't think they need the frosting at all - they are sweet enough.

Ultimate Twice Baked Potatoes

Awesome! Everyone loved them! Would give it 5 stars except I had to make adjustments. I used 1/2 the bacon and 1/2 the sour cream and 1/2 the butter. Still tasted FANTASTIC and much less calories and fat.

Ann's Dirty Rice

This was delicious but I have to say, I omitted the 1/2 tsp. of salt because I felt the bouillon and seasoning salt would be sufficient, and I'm glad I did - it would have been WAY too salty if I'd added the salt. Otherwise added my own things as others suggested - I only had 1/2 lb. of ground beef so I added pork sausage meat (took pork sausages out of their casing) to make 1 lb, then added chopped celery, carrot, dash of worcestershire - hubby and daughter loved it!
