Double-Delight Peanut Butter Cookies

These are perfect! Exactly what regular pb cookies have been missing all these years! I personally prefer to use my own pb cookie recipe instead of the pre-made Pillsbury. But man, oh man- I am an absolute pb freak, and these are the best pb cookies I have ever had. I'll take the extra few minutes to make these instead of regular cookies from now on!

Cream Cheese Blueberry Pie

not as good as i thought it would be after reading the reviews. the amt. of lemon juice called for in the recipe overwhelmed the blueberry flavor. i followed the advice of other reviewers and added vanilla to the cream cheese - that was a mistake. 1/4 to 1/2 tsp. of vanilla would be more than enough to enhance the flavor of the cream without overshadowing it. really a good idea though as an alternative to the same old blueberry pie.

Awesome Sausage, Apple and Cranberry Stuffing

Wow! Our family loves this stuffing! We prefer cornbread over white/wheat, but otherwise wouldn't change anything. This recipe has so much wonderful flavor. This will be our Thanksgiving stuffing from now on!

Pumpkin Apple Streusel Muffins

I really enjoyed these muffins. The pumpkin/apple flavor combination is great. The kids weren't thrilled with the chunks of apple, though. Maybe next time I'll just substitute applesauce for the oil and forego the chopped apple.

Cinnamon Hazelnut Biscotti

These are excellent but would not classify them as a 'cinnamon' biscotti - there is really no cinnamon flavor with only 1 tsp. of cinnamon. If you double the cinnamon & drizzle with melted white chocolate, they are awesome!

Rhubarb and Strawberry Pie

Excellent pie. I cut the rhubarb small and latticed the top crust and it cooked perfectly. I let it sit in the oven for 15 minutes, and then let the pie cool down almost completely before cutting - not runny at all. Easy to change the rhubarb/strawberry ratio based on how tart or sweet you like it. I've made this twice so far (with fresh rhubarb from our garden and fresh berries) - the 2nd time I brushed the egg yolk on the crust as per the recipe, which did not taste as good as my first which I brushed with lowfat milk. All in all great recipe!

Pebber Nodder (Danish Christmas Cookies)

Hmmm, I'm not sure how valuable this recipe is. Here's the thing. They ARE addicting, but they are NOT fabulous tasting (maybe they're only addicting to us carbo-holics???) I WILL make them again, but mostly because the cardamon is so expensive that I don't want it to sit in the pantry and go to waste, since I doubt I'll use it for anything else. They are not "all that", which I was hoping for after reading other reviews. They are, however, a good "fill-in", I guess you could say. They're tiny, kind of plain, nothing to look at, but they will vanish! The dough, however, does seem to be very versatile with lots of potential and possibilities.

Cake Balls

These are soooo good. Everyone loves them - lemon with white confectioner's coating were my biggest hit. They are quite a pain to make, though. I have decided it is absolutely necessary to freeze the balls for at least an hour (but as long as overnight) before coating them. I use a fondue fork to dip them which seems to work better than anything else. People are constantly asking me to make these. Fortunately, the recipe makes a TON of them. Unfortunately, they never last long!

I love this recipe! Very fast, very easy, very delicious! Not the absolute best pb fudge I've ever had, but so much easier to make, and still very tasty nonetheless!

Grandma's Doughnuts

This is exactly what I was looking for! Perfect with cinnamon & sugar. Without a topping/coating, they taste like a fried biscuit. But with the cinnamon & sugar they taste just like cider mill dougnuts - very pleasantly surprised. I'll never make doughnuts from scratch again!!
