Thick 'n' Zesty Ribs

These are not fall off the bone tender but they are still surprisingly juicy for the short amount of cook time. This was great for finding ribs on sale last minute and not having the usual 3-4 hrs to cook them. Will make again when in a pinch. Served with a green bean casserole, onion rice, and a loaded green salad.

Slow Cooker Potato Soup

This is nice since you can leave it cooking all day but I missed the butter and or cream I am used to in a cream soup. Definitely use 8 cups of potatoes as reviewers recommend and add plenty of salt, pepper, and desired seasonings to taste. I used fresh parsley and plenty of garlic herb seasoning. I topped the leftovers with a dollop of sour cream which helped give it a richer flavor. This would be good for those who are counting their calories.

Chocolate Chip Cookie Bars

I halved the recipe and baked in a 9 x 13 for 20 mins as reviewers suggested. I made a foil sleeve and greased it to make them easier to remove. Then cut them with a pizza cutter on a cutting board. Make sure to allow plenty of time to cool. Some of mine broke because I was too anxious to wait. I will make these again because they are so quick and easy but next time will bake 22 -25 mins

Steak 'N' Vegetable Soup

This was very good. I had some leftover cooked steak so I decided to use it in this. I added garlic and used my slow cooker. Had fresh parsley and green onions but subbed dried for the other herbs. I recommend adding the garlic.

Pasta Carbonara

Quick and easy. I used 1/3 less fat cream cheese because I had it on hand and it worked great. I added halved cherry tomatoes, a can of sliced mushrooms, some frozen peas and chopped fresh parsley because I had them to use up. Very fattening but very good. Served with Spinach Apple Salad, also from this site.

Chinese Lion's Head Soup

This was delicious. I had some extra produce to use up so I added it. I julienned some pea pods and baby carrots and added them to the cabbage. I also added some chopped cilantro to the meatballs. Garnished it with thinly sliced radish and more cilantro. Don't forget the sriracha if you like it spicy! Not sure if my additions took away from the recipe's authenticity, but it was still really good and a quick fix meal. A nice soup to clean out the fridge.

used garlic salt instead of garlic. Baked with foil covered tilapia. 10 mins cauliflower stir, then 20 mins tilapia, stirring cauliflower halfway through.

Beefy Baked Ravioli

This was super easy. I highly recommend getting the frozen ravioli from Aldi if you have one near you. They are very reasonable. Followed the directions almost to a T. Used a glass covered casserole dish instead of foil and used some of the cheese on top. I baked for 20 mins covered then uncovered and popped some frozen garlic bread on a cookie tray for the remaining 10 mins. Next time I would use only 1/2 lb meat because it was a little heavy on the meat for us. Will make this often. Love that you don't have to precook the ravioli first. Not gourmet but definitely satisfying

Cheddar Biscuit Cups

These were great and very easy. I doubled the recipe and made 12. Had to sub miracle whip (out of mayo) and that worked fine. I added some freshly chopped parsley from the garden and fresh cracked pepper. Next time I will add chives and garlic powder. Served with corned beef and cabbage in the slow cooker. Note: I tried using the muffin liners as suggested but the muffins stuck to them terribly. Next time just grease the pan as the recipe states.

Cheesy Baked Cauliflower

I used half a head of cauliflower and nuked it whole in a covered dish for 4 mins. Then broke it down into florets with a knife. I greased a smallish casserole dish, placed the cauliflower in it, then mixed the mayo, mustard, and parm and sprinkled it over the top with my fingers, then dotted the top with the cut up butter. Yum. Served with Roasted Potatoes and Greens and Golden Baked Chicken, also from this site.

Golden Baked Chicken

I scaled the recipe down to 2 and used 2 chicken leg quarters separated. The breading and butter amounts were perfect for that amount. Very good. Didn't have to flip the chicken. Served with Baked Cheesy Cauliflower and Roasted Potatoes and Greens also from this site. A delicious Sunday night dinner.

Roasted Potatoes with Greens

So easy and tasty. I melted the butter in the microwave with the chopped garlic and subbed fresh parsley because I didn't have the rosemary. I served this with Golden Baked Chicken and Cheesy Baked Cauliflower, also from this site. The other recipe called for a 375 degree oven so I cut the potatoes a little smaller and that worked fine. Very nice recipe to use up some random items. Will make often

Cheapskate Stew

After I browned the meat, celery, and onions I threw everything in the slow cooker (except the pasta) on high for 2 hrs and low for 4 hrs. I ended up leaving out the pasta entirely and it was just fine without it. I found this recipe to use up some leftover spaghetti sauce from the jar. Inexpensive, easy, and tasty. Served with Super Easy Rosemary Bread Machine Bread recipe also from this site.

Super Easy Rosemary Bread Machine Bread

Easy and delicious. I didn't have any rosemary so I subbed it and the thyme with dried Italian seasoning and some fresh chopped parsley. I had instant yeast so I used 2 1/4 tsp and it worked great. I didn't have to let it proof. Loved the flavor of the olive oil. I used the light setting for a 1.5 lb loaf. I turned off my machine about 7 mins before the end because it looked just right to me. Will definitely make this again.

Herbed Corn

I scaled this down and had to sub about half a cup of peas for the corn. I left out the thyme and am glad I did. I think it would have been over seasoned with it. Great way to jazz up frozen veggies. I will try this again without the thyme but in the microwave next time. Served as a side for beef and noodles with a spinach cherry tomato radish salad

Beef and Tomato Pie

This turned out better than I expected. I thought the crust would be soggy since the recipe didn't instruct to parbake before filling. Not the case. The crust turned out fine. It was moist and biscuit like with a nice browned outer crust. I added some ranch seasoning to the filling to jazz it up a bit. I mixed the dough in my K/A mixer and just patted in the greased pie pan with well floured hands, Didn't bother rolling out or kneading. Made it even easier. Nice base recipe to spice up to your liking. I served this with Cauliflower Radish Salad, also form this site.

Peanut Butter Cookies VII

I followed the recipe exactly. Very good. not too peanut buttery. Just right. I baked for 9 mins but next time will bake 10 mins. I might also try adding 1/2 c oats too.

Breakfast Fresh Potato Casserole Recipe

Nuked peeled and diced pots for 4 mins. came out with a good texture. will nuke with salt, pepper, and spices next time they were bland. used nuked crumbled bacon and dried onion instead of sausage and diced onion. worked well. was done in 45 mins. With a little broiling at the end. use cheddar cheese next time.

Cauliflower Radish Salad

This was delicious. I had to leave the water chestnuts out because I didn't have any on hand. It was still great. I subbed garden chives and parsley for the green onion because that was all I had. Really nice side for beef and tomato pie, also from this site.
