Pumpkin Gingerbread with Cream Cheese Frosting
About this Cook
I'm a second grade teacher who has come back home to Virginia to teach. It's a readjustment from being away for 6 years, and I don't get to bake as much as I'd like. (That should change in the next few months!) I love entertaining and opening up my home... so this hospitality, of course, fuels my motivation to try cooking new things!
My favorite things to cook
Any dessert, especially friends' favorites.
My favorite family cooking traditions
My Nuna makes banana pudding every holiday... I look forward to it each year. :) My Aunt Traci makes delicious baked beans, too. But other than that, I don't really have any... but once I have my own family, you bet there will be some! :)
My cooking triumphs
Within my circle of friends, I'm famous for my "chocolate chip banana bread" so people will give me their rotting bananas! My Dad also loves my "Mexican Lasagna," so it's become a tradition to make it for him every so often. :)
My cooking tragedies
In high school, I really wanted to bake a "creme de caramel" for my French Honor Society, so I took on the challenge. Well, let's just say it wasn't exactly edible. The "caramel" came out hard and burnt, and the "creme" was just as bad. That was a pretty humbling disappointment since it was the first time I tried baking something on my own.

Chuck's Favorite Mac and Cheese
For some reason, I was a bit paranoid to make this because it had cottage cheese in it! But according to friends, they thought it was one of the best they've ever had. I didn't put any sour cream in it, but I put some splashes of 1% milk. The cheeses I used were shredded Sharp Cheddar... and a shredded 3 Cheese blend. I also used Italian-seasoned bread crumbs (without the butter, like other reviewers suggested) and garlic powder. This is best served with some tomato soup! :)

Grandma's Gingersnaps
My housemate really liked these snaps. I'm not a gingersnaps fan so I'm going on her review here. I followed the recipe to a T. Nice and chewy.

Pumpkin Chocolate Chip Cookies III
These pumpkin chocolate chip cookies weren't as fabulous as other cookies I've had. Good, but didn't stand out as much! I'm hoping they're better the next day like most cookies are. :)
