Pumpkin Pie Squares
This recipe is a keeper. Instead of canned pumpkin I used pureed pumpkin. Since it is a little more liquidy, I didn't use all of the evaporated milk - maybe about half the can. I used a 9X9 pan and baked it for 45-50 minutes, until set. Yummy!!!

Quinoa and Black Beans
I used only 1 can of black beans. Very tasty and easy to make. Highly recommended.

Lemon Chiffon Pudding
I wouldn't make this again. The lemon was quite subtle. It needs LOTS more lemon juice and/or lemon zest.
