About this Cook
I am engaged and about to be married to my best friend. We have a dog and a cat which are our "children". I had just perfected my wonderful pizza crust (Jay's Signiture Pizza crust) when I was diagnosed with Celiac disease. It has changed my whole life and kitchen around. While I'm still trying to get used to my new diet, I have hope that one day I will be able to enjoy many of these gluten-laden recipes in my recipe box with the help of research on the disease.
My favorite things to cook
I love rich, home cooked meals and love to bake even though the ingredients may have changed. I love vegetables and am trying to grow fresh veggies myself at home in my garden. I like mexican and italian foods. I love experimenting with vegetables, fruit, and herbs. I love the twiced cheesiest potato soup on this site. I like using ingredients that normally don't go together. Like using chocolate in chili and apples with chicken. I absolutely cannot cook without Tony Chacere's seasoning. Anyone from Louisiana will understand. I put it on everything. It's so good on popcorn. I still use recipes that call for flour or bread. I just use gluten free bread mix. It's never the same, but it's better than nothing!
My favorite family cooking traditions
I love big holiday meals. I come from a big family so holidays were always a big deal. The casseroles and desserts bring back so many memories for me. They are mostly the same every year. I get to experiment with my own holiday recipes at work. We do a big holiday lunch every year.
My cooking triumphs
I am proud of my cheesecake(Chantal's cheesecake recipe) and am asked to bake it frequently. I pretty much don't have too many bad cooking experiences. Most of the recipes on this site are super easy to understand and cook. I don't think I've come across a bad recipe yet from this site.
My cooking tragedies
I recently had a horrible catastrophe. I had just enough okra out of my garden to cook it and was so excited and proud of myself. I put it to boil on the stove and I guess forgot about it. It burnt to a crisp. I was so depressed, I made my fiance go throw it outside because I couldn't even look at it. To my defense, I just had my wisdom teeth removed so I wasn't my normal functioning self and not nearly as wise.

Curried Chipotle Potato, Spinach and Cheese Wraps
It was way too bland for my taste. Nobody in my house liked it. I had to smother it in salsa so it was edible. The flavors didn't mesh well either.

Spanish Rice Original
This was so stinkin good! I didn't use bacon because I didn't want the fat and I'm not a big bacon fan. It was just like the spanish rice at restaurants! I also added peas and carrtos!

Garlic Broccoli
This was better than the garlic broccoli from our favorite take out! I like to mix in some cashews. It's very rich and filling. I barely ate my main dish!
