I am a reluctant cook but avid baker. I want to love to cook, but I'm not very confident with cooking so it's more of a job than an enjoyable activity. I live with my husband and two small children, ages 3 and 5. We are 'owned' by two dachshunds, Cleo and Julio and Sox the Siamese. All three animals are rescues and my charitable work is with canine rescue. I work part-time and take cake decorating courses for fun.

Chocolate Lover's Cheesecake
I made this for my husband's Easter potluck. When he called me in the afternoon he said, and I quote " I went in the lunchroom to get the pan and caught a guy licking it" Gross, but you get the point! Apparently, it was a huge hit and not a morsel was left. The only reason I give it 4 instead of 5 stars is because I had to make alterations suggested by a few other members in order to get the recipe to work. 1. I melted the chocolate chips 2. I added approximately 7 minutes to the cooking time as it was undercooked after the suggested time. Thank you for the great recipe!!

Microwave Risotto
I enjoyed this risotto, but it didn't excite me. I thought the microwave idea would be easier than traditional, but I actually found it a bit of a pain. My daughter enjoyed it and had two helpings :-)

Dave's Mocha Chicken
My household was divided down the middle on this one! My daughter and I didn't like it at all but my son and husband thought it was great. My main complaint is it was wayyyyy too salty!! I would definitely use a LOW SODIUM soy sauce the next time. However, I loved the rich, glossy, ruddy black 'finish' it gave the chicken. I enjoyed giving it a try though so thank you, Dave!
